THAI PINEAPPLE CHICKEN CURRY

Thai Pineapple Chicken Curry image

This is a quick, easy, and authentic Thai curry dish that's sweet and very spicy. I became addicted to the dish at a local restaurant and then worked to duplicate it at home. I think I've got the taste and presentation pegged. I'm guesstimating on the amounts since I don't measure much when I cook. Feel free to adjust to taste.

Tips:

  • Mise en place: Before you start cooking, gather and measure all of your ingredients and equipment. This will help you stay organized and ensure that you don't forget anything.
  • Use fresh, ripe pineapple: Fresh pineapple has a sweeter and more flavorful taste than canned pineapple. If you can't find fresh pineapple, you can use canned pineapple, but be sure to drain it well before using.
  • Don't overcrowd the pan: When you're cooking the chicken, don't overcrowd the pan. This will prevent the chicken from cooking evenly and will make it more likely to stick to the pan.
  • Simmer the sauce: After you've added all of the ingredients to the sauce, bring it to a simmer and then reduce the heat to low. Simmering the sauce will help to develop the flavors and thicken the sauce.
  • Serve with rice or noodles: Coconut pineapple curry sauce is traditionally served with rice or noodles. However, you can also serve it with other dishes, such as grilled chicken or fish.

Conclusion:

Coconut pineapple curry sauce is a delicious and versatile dish that can be enjoyed by people of all ages. It's easy to make and can be tailored to your own personal taste. Whether you're looking for a quick and easy weeknight meal or a dish to impress your guests, coconut pineapple curry sauce is a great option.
