Tips:

  • Use fresh, unsweetened coconut milk. Fresh coconut milk adds a rich, creamy flavor to the waffles. Avoid using canned coconut milk, as it often contains added sugars and preservatives.
  • Toast the coconut and pecans before adding them to the batter. Toasting enhances the flavor and aroma of the coconut and pecans. To toast them, spread them on a baking sheet in a single layer and bake at 350°F for 5-7 minutes, stirring occasionally.
  • Use a waffle iron that is hot and greased. This will help the waffles cook evenly and prevent them from sticking.
  • Don't overmix the batter. Overmixing can make the waffles tough.
  • Serve the waffles immediately with your favorite toppings. Coconut pecan waffles are delicious with butter, syrup, fresh fruit, or whipped cream. You can also use the waffles to make a breakfast sandwich.

Conclusion:

Coconut pecan waffles are a delicious and easy-to-make breakfast treat. They are perfect for a special occasion or a lazy weekend morning. The waffles are light and fluffy, with a crispy exterior and a moist, tender interior. The coconut and pecans add a sweet and nutty flavor that is sure to please everyone.
