Steps:
- Combine sugar-coconut - milk in a heavy pot -bring to a boil over medium heat. Boil-stirring until the mixture comes to the soft-ball stage-about 239° degrees on a candy thermometer.
- Remove from heat- add butter - beat until mixture begins to sugar.
- Drop in small mounds on wax paper.
- Cool - gently lift with a thin knife. Store in an airtight container.
Tips:
- To ensure the success of your pralines, use a heavy-bottomed saucepan so that the sugar mixture heats evenly.
- Use a candy thermometer to accurately measure the temperature of the sugar syrup. This will help you avoid overcooking or undercooking the pralines.
- Stir the sugar mixture constantly to prevent it from crystallizing. If you notice any sugar crystals forming on the sides of the pan, use a pastry brush dipped in water to dissolve them.
- Be patient when cooking the sugar syrup. It will take some time for it to reach the desired temperature.
- Once the sugar syrup is ready, remove it from the heat and stir in the coconut, pecans, and vanilla extract. Work quickly, as the sugar syrup will start to harden as it cools.
- Pour the praline mixture onto a greased baking sheet and let it cool completely. Once the pralines are cool, break them into pieces and enjoy!
Conclusion:
Coconut pecan pralines are a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients, you can create these delectable candies that are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give coconut pecan pralines a try. You won't be disappointed!
