Make this gluten-free bread in your bread maker. It's not as good as normal bread, but it's pretty good if you must avoid gluten. The mixture will look more like cake batter than bread dough in your machine, don't worry, it will be okay. The loaf may sink while it's baking, leaving a crusty, crunchy bowl on the exposed end, which you will want to slice off and discard. The finished bread will be quite firm and heavy, and I recommend slicing it thin. It makes good toast, but it toasts slowly. I use my darkest toaster setting and have to run that twice to get golden brown toast.

1 ½ tablespoons vegetable oil
1 teaspoon cider vinegar

1 cup unsweetened coconut milk (not cream of coconut)
1 egg yolk
1 1/2 tablespoons vegetable oil
1 1/2 teaspoons coconut extract
3 cups white flour (I used regular)
1/3 cup coconut (yes-the usual stuff)
2 1/2 tablespoons sugar
3/4 teaspoon salt
1 1/2 teaspoons bread machine yeast

Steps:

  • Measure into your bread machine as per it's instructions.
  • Cook on the sweet, white timer (4 hours on mine).
  • This makes a 1 1/2 lb loaf.

1 1/2 c canned coconut milk
4 c bread flour (i have used all purpose, and has worked)
1 Tbsp plus 1 teaspoon of gluten
2 tsp salt
1 1/2 tsp saf yeast, bread machine yeast or 1 packet of regular yeast

Steps:

  • 1. Place all the ingredients in the pan according to the order in the manufacturer's instructions. Set crust on medium and program for the Basic Cycle. This recipe is not suitable for the Delay Timer; so don't try it-you'll wish you hadn't!
  • 2. Remove bread from the pan immediately and place it on a cooling rack. Pass a brush with a little butter over the top and sides. Let cool to room temperature before slicing.
