COCONUT MARGARITAS

Coconut Margaritas image

Setting out to duplicate the coconut margaritas we had in Costa Rica, my first attempt was awful! I surfed the internet for a good recipe with little luck. I then took what I'd learned from my first nasty try and the ideas I picked up online and after about 5 or 6 attempts I came up with this. Enjoy!

This cocktail is reminiscent of a really good pina colada, but with tequila and lime instead of pineapple.

About 1 1/2 cups coconut milk ice cubes or regular ice cubes (see Cook's Note)

1/2 cup simple syrup
1/2 cup silver tequila or coconut-flavored tequila, if you can find it
1/3 cup orange liqueur, such as Grand Marnier
1/4 cup coconut soda or seltzer, such as LaCroix
1/4 cup coconut water
1/2 teaspoon coconut extract
2 limes, juiced, plus lime wedges, for serving
Coarse salt, for rimming the glasses
Cherries, for serving

Tips:

  • Use fresh lime juice: Fresh lime juice provides a brighter, more flavorful margarita. Avoid using bottled lime juice, which can be bitter and lack flavor.
  • Choose a good quality tequila: The tequila you use will significantly impact the flavor of your margarita. Opt for a 100% agave tequila, which is made from 100% blue agave plants. Avoid tequilas that are labeled "mixto," as they contain a mix of agave and other sugars.
  • Use Cointreau or another orange liqueur: Cointreau is a classic orange liqueur that pairs perfectly with tequila in a margarita. You can also use other orange liqueurs, such as Grand Marnier or Triple Sec.
  • Don't skimp on the ice: Ice is essential for a refreshing margarita. Use plenty of ice to keep your margarita cold and dilute it slightly.
  • Garnish with a lime wedge: A lime wedge is the perfect finishing touch for a margarita. It adds a pop of color and flavor.

Conclusion:

With its refreshing taste and festive appearance, the coconut margarita is a perfect cocktail for any occasion. Whether you're enjoying a night out with friends or relaxing at home, this delicious drink is sure to please. So next time you're looking for a tropical twist on a classic cocktail, give the coconut margarita a try.
