2 young coconuts
5 tablespoons white sugar, or to taste
1 pandan leaf, knotted
2 teaspoons agar-agar powder

Steps:

  • Break coconut shells with a hammer or the back of a heavy cleaver; collect coconut water in a saucepan. Pry flesh from the shell with a strong knife. Peel off any skin with a vegetable peeler. Slice flesh.
  • Add sugar and pandan leaf to the saucepan of coconut water. Heat over medium heat. Add agar-agar powder and stir until dissolved. Stir in sliced coconut flesh.
  • Remove mixture from heat and scoop out pandan leaf. Pour into individual cups or ramekins. Cool to room temperature, 15 to 20 minutes. Refrigerate until set, about 30 minutes. Serve chilled.

1/4 cup sugar
Zest of 2 limes
1/4 cup packed fresh mint leaves, plus torn leaves for garnish
1 1/2 cups coconut water, cold
1 cup lime juice (about 8 juicy limes)
1/2 cup white rum
1/4 cup coconut rum
Best-quality lime club soda, cold

Steps:

  • Combine the sugar, lime zest and 1/4 cup water in a small saucepan. Bring to a boil, stirring a few times until the sugar is dissolved. Chill completely before making the mojitos.
  • Add the mint and 1/4 cup of the chilled lime syrup to a pitcher; muddle with a wooden spoon to bruise the mint. Add the coconut water, lime juice, white rum and coconut rum and stir to combine. Refrigerate, covered, for at least 30 minutes to let the flavors meld.
  • Fill four glasses with ice, then fill by three-quarters with the rum mixture. Top off with lime club soda. Garnish with torn mint and serve.

2 parts pineapple-coconut juice (recommended: Kern's)
1 splash bottled lime juice (recommended: Rose's)
1 part vanilla vodka
1/2 part half-and-half
1/2 part banana Schnapps
Ice cubes
1/4 cup honey
1/4 cup sweetened coconut flakes (recommended: Baker's)

Steps:

  • Add all ingredients, except coconut flakes and honey, in a cocktail shaker with ice. Pour honey onto a plate. Lay out coconut on a plate. Dip the rims of chilled glasses into honey and roll in coconut. Shake and pour into chilled martini glasses to serve.
  • Note: For a non-alcoholic version, omit the vodka and the banana Schnapps and substitute the ice with 1 banana. Puree the mixture in a blender.

This is a fun & tasty treat to serve at parties. I found this on another web site when I was looking for jello shooters for our Hawaiian ethnic party. It didn't say what size of jello pkgs to use, I used small ones & for coconut milk I estimated @ 13 oz. I liked these because they weren't quite as sweet as other jello shooters & smooth tasting with the coconut milk.

1 (3 ounce) package lemon Jell-O gelatin
2 (3 ounce) packages lime Jell-O gelatin
2 tablespoons fresh lime juice
1 (13 ounce) can coconut milk (or juice)
2 cups coconut rum
2 1/4 cups water
1 cup whipping cream (in a spray can)

Steps:

  • Bring water to the boil & remove from heat.
  • In a large bowl, combine the 3 Jello packages. Slowly add the hot water, then the coconut milk/juice & lime juice. (You put the lime in the coconut & mix it all together). Wait 3 - 4 mins & then stir in the rum.
  • Pour into individual serving sized or plastic shot glasses & chill.
  • Spray shots with whipping cream, if preferred, before serving.
