Number Of Ingredients 8

1 1/2 cups water
1/2 cup sugar
3/4 cup lime juice ((strained))
zest 1 lime
1 1/2 cups water
1/2 cup sugar
3/4 cup lime juice
zest 1 lime

Steps:

  • In a small pot on medium high heat combine the sugar and water, bring to a boil, then lower heat and simmer for 5 minutes. Let cool completely.
  • When the syrup has cooled had the strained lime juice and zest, whisk to combine. Pour into a freezer safe bowl. Place in the freezer for approximately 1 hour (may be more or less time depending on your freezer).
  • Remove bowl from the freezer and with a fork break up the ice and mix to combine. Repeat 3-4 times or until the mixture is slushy. Serve in a tall glass with a spoon.
  • Follow the same steps for the freezer method, but instead of pouring into a bowl pour into the ice cream maker and churn according to manufacturer's directions, 25-30 minutes or until mixture becomes compact and creamy. Enjoy!

COCONUT GRANITA

Coconut Granita image

One of the first harbingers of summer in New York, especially above west 96th St, is the appearance on our street corners of carts selling 'coco helado,' or coconut ice. These little ices are a favorite at CFYL, so we decided to make our own version. In this Coconut Granita we used coconut milk to make a richer tasting and less sugary treat, and we think we've come up with something that is both simple and delicious. It's chic enough to be dessert for a dinner party, and down home enough to be eaten on the street from a paper cup like its inspiration.

Number Of Ingredients 1

1¼ cups coconut milk ¾ cup cold water ¼ cup unsweetened toasted coconut flakes ½ teaspoon lime zest Juice from 1 lime 3 tablespoons to ¼ cup sugar, to taste

Steps:

  • Mix all the ingredients together until well blended. Taste for sweetness.
  • Pour into a 9 x 9 x 2-inch glass baking pan and put into the freezer. After 30 minutes, with a fork scrape to form flaky texture. Continue to scrape the surface every 30 minutes until you have a fluffy snowy consistency. Serve or keep in an airtight container in the freezer, scraping every so often to keep a light texture.

COCONUT WATER GRANITA

Coconut Water Granita image

Nothing cools you off faster than a granita, the Italian shaved-ice delight. This one, made with coconut water, is a real catch: it's uncommonly refreshing and stunningly simple to make.

Time 4h10m

Number Of Ingredients 4

4 cups coconut water, preferably raw, such as Harmless Harvest (see Cook's Note)
1/4 cup superfine sugar
Sliced strawberries, for garnish
Toasted unsweetened coconut flakes, for garnish

Steps:

  • Combine coconut water and sugar in a 2-quart baking dish; stir to dissolve sugar. Freeze until solid, at least 4 hours and up to 1 month (covered if freezing longer than a day).
  • Using the tines of a fork, scrape surface to create ice crystals; transfer to serving bowls or glasses; top with strawberries and coconut flakes and serve immediately.

Tips:

  • Use fresh coconut milk. Fresh coconut milk has a richer flavor and creamier texture than canned coconut milk.
  • Chill the coconut milk and lime juice before making the granita. This will help the granita freeze more quickly and evenly.
  • Use a shallow dish to freeze the granita. This will help the granita freeze evenly and quickly.
  • Stir the granita every 30 minutes or so while it is freezing. This will help to break up the ice crystals and create a smooth, slushy texture.
  • Serve the granita immediately or store it in the freezer for up to 2 weeks.

Conclusion:

Coconut lime granita is a refreshing and flavorful dessert that is perfect for any occasion. It is easy to make and can be customized to your liking. With just a few simple ingredients, you can make a delicious and refreshing granita that will cool you down on a hot summer day.
