My grandmother used to make this recipe in Ecuador, it's been in the family for many years. I'm the only one who continues to make this recipe in my family. It's the easiest dessert that you can make. I love it and I hope you will too.

Time 4h30m

Yield 12

Number Of Ingredients 7

6 eggs
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 (15 ounce) can coconut milk
1 ½ cups whole milk
1 teaspoon vanilla extract
1 cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the sugar in a nonstick skillet, and slowly melt over low heat without stirring. Shake the pan by it's handle to mix, but do not stir with a spoon. When the sugar has melted, pour into a 3 quart glass baking dish, coating the bottom.
  • In a large bowl, beat the eggs with an electric mixer until smooth. Pour in the condensed milk, evaporated milk, coconut milk, whole milk, and vanilla; mix until well blended, about 2 minutes. Pour the egg mixture over the sugar in the pan. Place the pan inside of a larger dish and set in the oven. Fill the outer pan with water to 1 inch deep.
  • Bake for 1 hour in the preheated oven, or until a toothpick inserted in the center comes out clean. Remove the flan from the water bath, and refrigerate until cold, 4 hours to overnight.
  • To serve, run a knife around the edges of the dish to loosen the flan, then invert onto a serving dish.

COCONUT FLAN

Coconut Flan image

This sweet, creamy dessert uses only the solid coconut cream found at the top of canned unsweetened coconut milk.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 8

2 cups sugar
1/4 cup water
3/4 cup unsweetened coconut cream (from one 13-ounce can coconut milk)
2 1/4 cups whole milk
1/4 teaspoon coarse salt
5 large eggs
1 teaspoon pure vanilla extract
2 tablespoons coconut flakes, toasted (optional)

Steps:

  • Preheat oven to 325 degrees. Set out eight 6-ounce ramekins, and prepare an ice-water bath. Bring 1 cup sugar and the water to a boil in a small saucepan over medium-high heat, stirring until sugar has dissolved. Continue to cook, without stirring, brushing down sides with a wet pastry brush to prevent crystals from forming, until syrup is medium amber, about 8 minutes. Immediately submerge bottom of pan in ice-water bath to stop cooking. Working quickly, pour a thin layer into each ramekin, swirling to coat bottom. (You won't use all the caramel; discard the remaining.) Place ramekins in a roasting pan.
  • Bring a pot of water to a boil. Remove from heat, and cover. Bring coconut cream and milk to a boil in a saucepan, whisking to combine; remove from heat. Whisk together remaining cup sugar, the salt, and eggs in a bowl. Whisking, gradually add coconut mixture. Whisk in vanilla. Pour through a fine sieve into a large liquid measuring cup, and divide among prepared ramekins.
  • Add enough reserved hot water to roasting pan to come halfway up sides of ramekins. Carefully transfer to oven, and bake until just set, 55 to 60 minutes. Transfer ramekins to a wire rack to cool. Cover with plastic wrap; refrigerate at least 6 hours (or overnight). Let stand at room temperature about 10 minutes before unmolding. Run a thin knife around edge of each flan, and invert onto a plate. Garnish with coconut flakes if desired.

2 cups sugar
1 to 2 tablespoons water
1 (14-ounce) can sweetened condensed milk
1 (14-ounce) can unsweetened coconut milk
5 large eggs
1/4 teaspoon vanilla extract

Steps:

  • Make the Caramelo: In a small heavy saucepan bring sugar and water to a boil, stirring until sugar is dissolved. Boil syrup, without stirring, until golden caramel. Immediately pour the some of the caramel into each tuna can, tilting them to coat the bottom and sides. Let caramel cool.
  • (Drizzle any remaining caramel onto a sheet of parchment or waxed paper in decorative squiggles. Let the squiggles harden and use them as a garnish for the flan.)
  • Make the flan: Preheat the oven to 325 degrees F.
  • In a large bowl, whisk together condensed milk, coconut milk, eggs, and vanilla until smooth. Divide the mixture among the tuna cans.
  • Place the tuna cans in a shallow baking dish and place on the middle rack in the oven. Pour in enough hot water to reach halfway up the sides of the cans. Bake the flan until just set, but still wiggly in the center, about 30 to 45 minutes. Transfer the flan to a rack and let cool. Chill the flan in the refrigerator. (The flan can be prepared up to 3 days in advance.)
  • When ready to serve, dip the cans in a saucepan of hot water. Using a finger, gently press down the edges of the flan, until the caramel runs up the side, which indicates that it's loosened. Invert each flan onto a plate. Break the caramel squiggles into pieces and insert them into the top of each flan.

COCONUT CARAMEL CREAM CHEESE FLAN

Coconut Caramel Cream Cheese Flan image

My wonderful former neighbors in Gainesville, FL (Rafael and Madeleine De Paz) gave me this recipe after giving me, for Christmas, one of these. Ignore the "caramels." The last two ingredients make the caramello for the cake pan. (RecipeZaar doesn't let me list instructions for the ingredients.)

COCONUT FLAN OR QUESO DE COCO

Coconut Flan or Queso de Coco image

This is an Ecuadorian recipe and it is called Queso de Coco which translates as Coconut Cheese but since I moved to USA, I just call it Coconut Flan. I came up with my own version of this Coconut Flan by adding sweetened condensed milk to the traditional recipe and ground spices instead of previously boiling the cinnamon sticks,...

Provided by Cris Davenport

Categories     Puddings

Time 2h20m

Number Of Ingredients 10

1/3 c sugar for the syrup
3 large eggs, beaten
1 (14 oz) can(s) sweetened condensed milk
3/4 c flaked sweetened coconut
2 1/4 c whole milk or evaporated milk
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground allspice
1 pinch salt
1 tsp vanilla extract

Steps:

  • 1. Pour the sugar in a small saucepan and melt it at low temperature until it dissolves and gets a nice brown color. Check it often or it gets burned. Add 1/2 cup water and let it cook at medium temperature until the liquid has a syrupy consistency. It will be very hot. Pour it into a medium-size baking dish and cover the bottom and sides of the pan.
  • 2. Blend the milk with the coconut for 10 seconds or so. Pour this mixture in a bowl and add the beaten eggs. Mix well and add the remaining ingredients stirring well. Pour this mixture into the prepared baking dish. Bake in a double boiler at 350F for 45 minutes to 1 hour. It will be ready when the top of the dessert looks golden brown and when a skewer inserted in the center of the flan, comes out clean. Let it cool down. Store in the fridge for at least 5 hours or overnight. To unmold: Microwave the flan in the baking dish for 2 minutes and turn over a platter. Refrigerate for at least 2 hours. Enjoy!

Time 3h10m

Yield 6 servings

Number Of Ingredients 9

2 cups milk
1 cup coconut milk
1 cup coconut cream
1 cup toasted coconut, recipe follows, or store bought toasted coconut
1 cup sugar
1/4 cup water
2 tablespoon lemon juice
6 eggs
3 egg yolks

Steps:

  • Preheat oven to 325 degrees F.
  • Combine milk, coconut milk, and coconut cream in a saucepan. Stir, bring to a boil, lower heat, and simmer for 15 minutes until slightly reduced. Remove from heat and cool for 5 minutes. Add toasted coconut and infuse for 15 minutes.
  • To make the caramel: combine the sugar, water, and lemon juice in a medium saucepot and cook over high heat, without stirring, until it darkens to amber. Pour the caramel evenly into 6 (4-ounce) ramekins and set aside.
  • In a bowl, whisk together the eggs and the yolks. Strain the milk mixture into the eggs and whisk to combine. Fill each ramekin with this mixture, then place ramekin in roasting pan. Create a water bath by filling the roasting pan 1/3 way with hot water, and cook, covered with foil, for 25 minutes. Allow to cool before serving.
  • To unmold the flan: take a paring knife and run it around the sides of the ramekin to loosen the flan. To help it along, you may also place the ramekin in a shallow bowl with warm water until it comes halfway up the sides for a few seconds. Invert a serving plate on top of the ramekin and flip over to unmold.

Tips:

  • Use fresh ingredients. This will result in a more flavorful flan.
  • Don't overcook the flan. Overcooked flan will be tough and rubbery.
  • Let the flan cool completely before serving. This will help it to set properly.
  • To make a dairy-free flan, use coconut milk instead of dairy milk.
  • To make a vegan flan, use agar-agar powder instead of eggs.
  • Flan can be made ahead of time. It can be stored in the refrigerator for up to 3 days.

Conclusion:

Coconut flan is a delicious and versatile dessert that can be enjoyed by people of all ages. It is a perfect dessert for special occasions or for a simple weeknight treat. Whether you are looking for a traditional flan recipe or a more modern twist, there is a recipe in this article that is sure to please you.
