2 eggs, beaten
1 cup white sugar
1 cup chopped dates
1 teaspoon vanilla extract
1 tablespoon butter
3 cups crispy rice cereal
1 cup flaked coconut

Steps:

  • In a medium saucepan over medium heat, combine the eggs sugar and dates. Bring to a boil, stirring occasionally, and boil for 5 minutes. Remove from heat and stir in the butter and vanilla. Mix in crispy rice cereal. Butter hands and roll the mixture into walnut sized balls. Roll the balls in coconut. Serve.

1/2 cup butter
1 cup chopped dates
3/4 cup sugar
2 eggs, beaten
1 cup chopped pecans
1 cup crisp rice cereal
1 teaspoon vanilla extract
2 cups sweetened shredded coconut

Steps:

  • In a saucepan, melt butter over low heat. Stir in the dates, sugar and eggs. Cook and stir over low heat for 10-15 minutes or until thermometer reads 160°. Remove from the heat; stir in the pecans, cereal and vanilla. When cool enough to handle, shape into 1-in. balls; roll in coconut. Place on waxed paper-lined baking sheets. Refrigerate for 1-2 hours or until firm. Store in an airtight container in the refrigerator.

I love making these no- bake date and nut treats in the summer because they only require about 5 min of cooking! Make sure the date mixture doesnt boil rapidly or it will curdle the egg!

8 Tbsp (1 stick) unsalted butter
3/4 c sugar
1 c chopped dates
1 lg egg, lightly beaten
1/4 tsp salt
1 tsp vanilla extract
2 c rice krispies cereal
3/4 c pecans, toasted and chopped
11/2 c sweetened shredded coconut

Steps:

  • 1. Melt butter in lg pot over med heat. Add sugar, dates, egg and salt and cook, stirring occasionally, until sugar is dissolved, about 5 min. Off heat, stir in vanilla, rice krispies and pecans until incorporated. Let cool 15 min.
  • 2. Place coconut in shallow dish, Shape cooled mixture into 1 in balls, roll in coconut, transfer to parchment lined rimmed baking sheet, and refrigerate until firm, about 15 min. Serve. (Balls can be stored in airtight container at room temp for up to 3 days)

STIR AND COOK 7 MINUTES
2 large eggs
2/3 c sugar
3 Tbsp butter
1 c dates, chopped
REMOVE FROM HEAT AND ADD FOLLOWING
1 tsp vanilla extract
2 c rice krispies
1 c pecans (chopped)
FORM INTO BALLS AND ROLL IN COCONUT

  • 2. After it is all mixed together, let it cool for 30 minutes to an hour. The mixture forms into a ball much easier. Then roll in coconut.
