Garlic powder
Italian seasoning
Salt and pepper
1 boneless pork butt (approximately 7 pounds)
50 fluid ounces coconut milk (recommended: Chaokoh)
250 grams yellow curry paste (recommended: Mae Ploy)
5 tablespoons finely chopped ginger
5 tablespoons finely chopped garlic
1 tablespoon Chinese fermented black beans, rinsed and chopped
1/4 cup sesame oil
8 to 10 kaffir lime leaves
1/4 bunch fresh cilantro
1/4 jalapeno pepper
4 cloves garlic
2 cups basmati rice
3 tablespoons butter
Salt and pepper
1 jalapeno pepper
1 poblano pepper
1 tablespoon cumin seeds
1 red onion
6 to 8 tomatoes
1/2 bunch fresh cilantro
2 limes, juiced
Salt and pepper
Corn tortillas, for serving

Steps:

  • For the pork: Preheat the oven to 350 degrees F. Rub the spices into the pork and roast for about 8 hours. Let cool. Pull apart and discard any fat. Put the pork pieces in a large pot and add the coconut milk.
  • Meanwhile, for the curry sauce: Saute the curry paste, ginger, garlic, and black beans in sesame oil until fragrant, 3 to 4 minutes. Add this mixture to the pot with the pork and coconut milk. Add the lime leaves. Braise on low heat for 1 to 2 hours.
  • For the rice: Blend the cilantro, jalapeno, garlic, and 1 cup of water. Put this mixture in a pot on the stove. Add the basmati rice. Add 2 1/2 cups water. Bring to a boil, and then simmer, covered, until the rice absorbs the liquid, 20 to 25 minutes. When done, add the butter and salt and pepper, to taste.
  • For the salsa: Roast the jalapeno and poblano peppers, peel, and remove the seeds. Toast the cumin seeds and then grind. Dice the tomatoes and red onion and mix together in a bowl with the other salsa ingredients.
  • Heat the corn tortillas on a griddle. Plate the rice, put the pork with sauce on top, and finish with salsa and tortillas.

Number Of Ingredients 15

1 1/2 teaspoons lime zest, grated or 10 dried kaffir lime leaves
1 1/4 cups coconut milk
2 3/4 cups water
1 teaspoon salt
1 1/2 cups jasmine rice (or basmati or other long grain)
2/3 cup cilantro, chopped
2 tablespoons cilantro, chopped for garnish
2 large garlic cloves
1/4 cup unsalted dry roasted peanuts
1 tablespoon fish sauce or 1/2 teaspoon salt
1/2 cup canola oil (3 TBSP in sauce, remainder to fry tofu)
1 tablespoon chili sauce (such as sriracha, to taste)
1 (16 ounce) package firm tofu, cut in 1/2-inch cubes
2 cups broccoli, cut in small pieces
1 cup scallion, chopped (white & green parts)

Steps:

  • If using lime leaves (dried), soak in hot water for 30 minutes.
  • Bring coconut milk, 2 1/2 cups water, 1 tsp salt to a boil, then add rice.
  • Cover the pan and reduce heat to lowest setting.
  • Cook for 25 minutes.
  • Pan fry tofu until golden brown.
  • Drain on papertowel & set aside.
  • Chop lime leaves in small pieces.
  • In a food processor or blender, combine lime rind/leaves, 2/3 cup cilantro, garlic, & peanuts.
  • Run the machine in spurts.
  • With the machine running, add the fish sauce & 3 TBSP oil, then the chili sauce.
  • Transfer mixture to bowl.
  • Put broccoli and 1/2 cup water in pan.
  • Cover and steam for 2 minutes.
  • Add sauce, stir for 1 minute, then add tofu.
  • Stir scallions into rice.
  • Serve tofu curry over rice.

2 tablespoons butter
1 pound roughly chopped cooked chicken thighs
1 large onion, finely chopped
1 apple - peeled, cored, and minced
2 large cloves garlic, grated
4 tablespoons yellow curry powder
2 tablespoons tomato paste
1 ½ tablespoons all-purpose flour
1 ½ teaspoons zafrani garam masala
½ teaspoon ground ginger
3 ¾ cups light unsweetened coconut milk, divided
2 large carrots, peeled and roughly chopped
1 large russet potato, peeled and roughly chopped
4 ¾ cups chicken broth, divided
3 tablespoons light brown sugar
2 tablespoons mushroom-flavored dark soy sauce
2 tablespoons chile-garlic sauce (such as Sriracha®), or to taste
salt to taste
2 cups uncooked short-grain white rice
½ teaspoon salt

Steps:

  • Heat butter in a pan over medium-low heat. Saute onion until soft, translucent, and slightly caramelized, about 10 minutes. Add apple, garlic, curry powder, tomato paste, flour, garam masala, and ginger. Stir while allowing spices to bloom and flour to cook, 2 to 3 minutes. Add 2 cups coconut milk, carrots, and potato; bring to a boil. Add 4 cups broth, brown sugar, soy sauce, and Sriracha; return to a boil.
  • Toss chicken into the pan and cover. Reduce heat to a simmer and cook for 30 minutes. Remove the lid and check thickness; if it appears thin, leave lid off and allow to simmer until reduced to your liking, about 15 minutes. Season with salt to taste.
  • Meanwhile, place rice into a bowl or pot and fill with water, a few inches above the rice. Shake from side to side with a flat hand and separated fingers while moving up and down. Pour out water and repeat process until water runs clear, about 5 times. Drain in a fine-mesh strainer.
  • Combine drained rice, remaining coconut milk , remaining chicken broth, and 1/2 teaspoon salt in your pot and stir. Bring to a boil; cover, reduce heat to a light simmer, and allow to cook until rice is fluffy and liquid has been absorbed, about 20 minutes. Remove from heat, cover the lid with a towel, and let rest for 20 minutes. Serve with chicken mixture.

Standard Base:
3-5 tbsp green jamaican curry powder
3 tbsp olive oil
3 garlic cloves, minced
1 tbsp dried basil (or fresh chopped)
1 large onion diced (I use red)
1 14oz can diced tomato or 1 cup chopped tomato of any kind
1 1/2 14oz cans coconut milk
1/4 cup flour
Water (depending on how watery you want the curry)
1tbsp sugar
salt and pepper and cayenne to taste
Optional and Adaptable:
1 large red pepper, diced
1 carrot diced or cut into rounds
1 large sweet potato or yam diced
15 asparagus spears, chopped
1-2 meat, poultry or seafood cubed or diced.

Steps:

  • 1. Heat the garlic, curry and oil for about 5 minutes on low. 2. Add all the vegetables except the tomatoes and cook on medium until slightly tender, approximately 10 minutes. While you are cooking the vegetables, cook the chicken (or other raw meat) in a frying pan until juices run clear. Season with a pinch of curry, or other seasonings. 3. Add the meat to the vegetable mixture. 4. Add the tomatoes, milk, flour, basil and sugar . If you are using canned tomato, you can add the juice. Add as much water as desired for how much liquid you want in your curry. Add salt and pepper to desired taste. 5. Bring to a boil and simmer 45 min to an hour. Serve over plain white rice (cooked). I usually substitute coconut milk for some or most of the water when preparing white rice for this dish.
