Tips:

  • Use fresh coconut: Fresh coconut has a sweeter, more flavorful taste than dried or shredded coconut. If you can't find fresh coconut, you can use unsweetened shredded coconut, but be sure to soak it in warm water for 30 minutes before using to soften it.
  • Use full-fat coconut milk: Full-fat coconut milk will give your cubes a richer, creamier flavor. If you're using light coconut milk, you may need to add a little extra cornstarch to thicken the mixture.
  • Don't overcook the coconut mixture: The coconut mixture should be thick and bubbly, but not browned. If you overcook the mixture, the cubes will be tough and chewy.
  • Chill the coconut mixture thoroughly before cutting it into cubes: This will help the cubes hold their shape.
  • Coat the coconut cubes in shredded coconut before serving: This will give them a delicious, toasted flavor.

Conclusion:

Coconut cubes are a delicious and versatile treat that can be enjoyed on their own or used in a variety of desserts. They're a great way to use up leftover coconut milk and they're also a fun and easy project to make with kids. With just a few simple ingredients, you can create a batch of delicious coconut cubes that are sure to be a hit with everyone who tries them.
