Coconut Creme

I have friends who BEG me to make this cake for their birthdays. It's ALWAYS a big hit when I take it to parties & pot luck events. Be sure to check out the "Optional" step at the end of the recipe. It's my preferred way to make it! Hope you enjoy!!

1 box white or yellow cake mix (+ ingredients)
1 can(s) sweetened condensed milk (not evaporated milk!)
1 can(s) coco lopez (can be found in the grocery store with drink mixers)
1 pkg cool whip
flaked coconut
OPTIONAL: SEE STEP 5 BELOW
1 can(s) crushed pineapple

Steps:

  • 1. Prepare cake mix according to package directions in a 13x9 baking pan; cool. Do not remove cake from pan.
  • 2. Poke holes all over the entire cake until it resembles a pegboard! (I use a plastic orange peeler from Tupperware; it's about the thickness of a pencil.)
  • 3. In a small bowl mix together sweetened condensed milk and Coco Lopez until smooth and pour over entire cake; refrigerate overnight.
  • 4. Spread cool whip evenly over top of cake, and sprinkle with flaked coconut. Serve immediately!!!
  • 5. OPTIONAL: I sometimes like to add crushed pineapple to this cake. Drain as much of the juice from the can as possible, and spread crushed pineapple across top of cake after it has been refrigerated, and prior to adding cool whip. It's AHHHHHMAZING! :)

1 (18.25 ounce) package yellow cake mix
1 (20 ounce) can crushed pineapple with juice
¾ cup white sugar
2 (3.5 ounce) packages instant vanilla pudding mix
3 cups milk
1 cup heavy whipping cream
¼ cup confectioners' sugar
1 teaspoon vanilla extract
¾ cup flaked coconut, toasted
½ cup chopped pecans

Steps:

  • Prepare and bake cake mix according to box directions for a 9 x 13 inch cake pan.
  • While the cake is baking, combine pineapple with juice and 3/4 cup sugar in a medium saucepan. Cook over medium heat for 20 minutes until thick and syrupy, stirring occasionally. Pierce top of hot cake with fork at 1 inch intervals. Pour pineapple mixture over cake. Cool completely.
  • Beat pudding mix with milk until smooth. Spread pudding over cooled cake.
  • Whip cream until slightly thickened. Add confectioner's sugar and vanilla, and whip until soft peaks form. Spread over top of cake. Chill cake for 24 hours. Sprinkle with coconut and pecans just before serving. Refrigerate leftovers.

1 (18 ounce) box Duncan Hines yellow pudding cake mix
1/2 cup oil
1 cup water
3 eggs
3 bananas
1 large Cool Whip Lite
1 (20 ounce) can crushed pineapple
1 cup sugar
8 ounces light cream cheese
1/2 cup coconut

Steps:

  • Bake cake in a sheet pan according to directions on the back of the box.
  • Combine one cup of sugar with the can of crushed pineapple. Bring to a boil.
  • Upon removing the cake from the oven, punch holes all over the top of the cake with a meat fork.
  • Pour the hot pineapple mixture evenly over the top of the cake.
  • Once the cake has cooled, slice the bananas and layer evenly over the top of the pineapple mixture. (You can dip the banana slices in orange juice to keep them from turning dark.).

1/3 cup vegetable oil
3 (59 g) eggs

1 cup shredded coconut

Steps:
