brownie base:
2 cups sugar
1 cup unsalted butter, softened to room temperature
1 1/2 tsp. pure vanilla extract
4 large eggs, lightly beaten
1 1/2 cups flour
2/3 cup unsweetened cocoa powder
coconut cluster topping:
2 cups sweetened toasted coconut
1 cup half and half
1/4 cup superfine sugar

Steps:

  • 1. Heat oven to 350. Lightly grease a 15 x 10 inch baking pan.
  • 2. For brownie base, in medium bowl with electric mixer, beat together sugar and butter til light and fluffy. Add vanilla and eggs, blending well.
  • 3. Add flour and cocoa; mix well. Spread into prepared pan.
  • 4. For coconut cluster topping, mix ingredients in a small bowl. Spread over batter. Steps:

  • Preheat oven to 350. Spray 9X13X2 pan with nonstick cooking spray.

1 1/4 cups all-purpose flour
1/2 cup sweetened coconut flakes
1/2 cup chopped skinned almonds, optional
