Tips:

  • Use fresh coconut if possible, as it has a better flavor and texture than dried coconut.
  • If you don't have a food processor, you can grate the coconut by hand using a box grater.
  • Be sure to toast the coconut before using it, as this brings out its flavor and makes it more fragrant.
  • When shaping the mice, use your hands to gently press the mixture together. Don't overwork it, or the mice will be tough.
  • If the mixture is too dry, add a little bit of milk or water until it comes together.
  • If the mixture is too wet, add a little bit more coconut or flour until it is the right consistency.
  • Bake the mice until they are golden brown and set. Don't overbake them, or they will be dry.
