¼ teaspoon almond extract
1 ½ teaspoons vanilla extract
¼ teaspoon fine salt
1 large egg white
3 cups shredded unsweetened coconut

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine condensed milk, almond extract, vanilla extract, salt, and egg white in a bowl. Whisk until thoroughly combined. Add about 2 1/3 cups shredded coconut. Mix with a spatula until mixture is sticky and holds together. Form into balls using a sorbet scoop.

  • Preheat oven to 375 degrees F. In a bowl, whisk together egg white, honey, vanilla, lemon zest, and salt. Stir in coconut until completely coated with egg mixture. With a 1 1/2-inch ice-cream scoop, make 15 balls, transferring each one to a parchment-lined baking sheet, spacing about 2 inches apart.

2 tsp vanilla extract
1 14 oz can sweetened condensed milk (reg or fat free)
24 chocolate kisses candy

Steps:

  • 1. Preheat oven to 350F. Line baking sheets with parchment paper or grease well.
  • 2. In a large bowl, mix together coconut, flour and salt.
  • 3. Add vanilla and sweetened condensed milk. Batter will be stiff.
  • 4. Drop onto cookie sheets by a tablespoon or 2 oz cookie scoop. Make sure they are rounded mounds of dough. You should have 24 cookies.
  • 5. Bake 16 to 20 minutes until golden. Ovens may vary so keep an eye on them, they should be a rich golden brown when they are done.
  • 6. Remove from the oven and gently press a candy kiss into the center of each cookie. Move to wire rack to cool.

1 cup granulated sugar
1/4 teaspoon salt
1/2 teaspoon vanilla

  • Preheat the oven to 350°F (180°C). Lightly grease 2 baking sheets.
  • In a medium bowl, with electric mixer on high, beat egg whites into soft peaks. Gradually add sugar and salt, beating after each addition until peaks are glossy. Fold in vanilla and orange zest. Fold in coconut and nuts.
  • With hands, roll heaping tablespoonfuls of mixture into rounds and set on baking sheets. Bake 20 to 25 minutes, or until golden. Cool on racks.
  • Place chocolate chips in microwave-safe bowl and microwave at 25 second increments until chocolate chips are shiny.
  • Dip bottoms of macaroons in chocolate.

Steps:

  • Adjust oven racks to upper-middle and lower-middle positions and heat oven to 375 degrees. Line two cookie sheets with parchment paper and lightly spray parchment with nonstick vegetable cooking spray.

  • In a heavy saucepan stir together the egg whites, the sugar, the salt, the vanilla, and the coconut, sift in the flour, and stir the mixture until it is combined well. Cook the mixture over moderate heat, stirring constantly, for 5 minutes, increase the heat to moderately high, and cook the mixture, stirring constantly, for 3 to 5 minutes more, or until it is thickened and begins to pull away from the bottom and side of the pan. Transfer the mixture to a bowl, let it cool slightly, and chill it, its surface covered with plastic wrap, until it is just cold. 2 tablespoons finely grated orange zest; 1/4 cup fresh orange juice (1 to 2 medium oranges)
3 large egg whites
Pinch of salt
1 cup plus 2 tablespoons sugar
3 ounces bittersweet chocolate, finely chopped

Steps:

  • Preheat oven to 325 degrees, with racks in upper and lower thirds. Line two baking sheets with parchment paper, and set aside. Using your hands, mix together the coconut and orange juice in a large bowl, then mix in zest; set aside.
  • Put egg whites and salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on medium speed until frothy. Beat in sugar, 2 or 3 tablespoons at a time. Raise speed to high; beat until stiff, shiny peaks form.

2 egg whites
1/2 cup caster sugar
100 g dairy free chocolate
2 cups shredded coconut

Steps:

  • Preheat oven to 150°C or 130°C fan. Line 2 baking trays with baking paper.
  • Beat egg whites in a large bowl until stiff peaks form.
  • Gradually beat in sugar, adding a little and beating until dissolved. Beat until firm and glossy.
  • Finely grate half the chocolate and fold into egg-white mix with coconut.
  • Drop generous teaspoons onto tray, allowing some space for spreading.
  • Bake for 13-15 rains, until pale golden and firm. Cool on tray.
  • Melt remaining chocolate and drizzle lightly over macaroons in a diagonal pattern with a teaspoon. Allow chocolate to set.

2 3/4 c shredded coconut, sweetened
2/3 c granulated sugar
1/4 c all-purpose flour
1/4 tsp salt
4 egg whites
1/2 tsp almond extract
1/2 tsp vanilla extract
1/2 c dried cranberries, chopped
WHITE CHOCOLATE GLAZE
3 oz pure white chocolate
1/4 tsp shortening

Steps:

  • 1. Preheat oven to 325 degrees. Line a large cookie sheet with parchment paper or a silicone baking mat. Set aside.
  • 2. Make the macaroons: In a large bowl, combine coconut, sugar, flour and salt. Add the egg whites and stir with a large rubber spatula until combined. Stir in the almond and vanilla extracts, then the chopped dried cranberries.
  • 3. Measure one heaping tablespoon of mixture for each and drop into a mound on the prepared cookie sheet, making sure they are nicely rounded and 2 inches apart.
  • 4. Bake for 20 minutes or until the edges are lightly browned. Remove from the oven and allow to cool on the cookie for 5 minutes, then transfer to a wire rack to cool completely.
  • 5. Make the white chocolate glaze: Melt the white chocolate and shortening together in a small microwavable bowl in 20 second intervals until melted, stirring well after each increment. Drizzle over cookies. Cookies with glaze stay fresh in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.

3 egg whites
1 1/4 cups caster sugar (as fine as you can get)
1 teaspoon grated fresh lemon rind
2 tablespoons cornflour (cornstarch)
3 cups desiccated coconut (unsweetened)
125 g dark semi-sweet chocolate, melted

Steps:

  • Preheat oven to 160°C Line a big tray with baking paper.
  • Place egg whites in a bowl and beat with an electric beater until soft peaks form.
  • Add the sugar slowly and continue beating till mixture appears thick and shiny and the sugar is completely dissovled.
  • Add the grated rind and beat till it is just mixed.
  • Add the coconut and the cornflour and stir with a metal spoon till they are just incorporated well into the mixture.
  • (DO not stir too much) Drop one heaped teaspoonful of the mixture onto the tray about 3-4 cms from each other and bake on the top shelf for 15-20 minutes or till the top is light golden in colour.
  • Cool macaroons and then dip half into the melted chocolate.
  • Allow the chocolate to set before serving.

2 egg whites
1/8 teaspoon salt
1 (14 ounce) can sweetened condensed milk
1 teaspoon vanilla
2 (14 ounce) packages shredded coconut
3 cups semisweet chocolate chips, divided
1 cup white chocolate chips

Steps:

  • Preheat oven to 300 degrees, Generously grease cookie sheets.
  • In a large bowl, whisk together egg whites and salt. until foamy. Whisk in condensed milk and vanilla.
  • Fold in coconut and 1 cup of semisweet chips and 1 cup white chocolate chips.
  • Drop batter by heaping tablespoonfuls onto prepared cookie sheets and bake at 300 degrees for 20 minutes. Cool on pans 2 minutes, remove from pans and let cool completely.
  • Melt remaining chocolate chips in microwave and dip bottom of each cookie in melted chocolate to coat. Allow to harden on waxed paper.

Melt almond bark in a microwave safe bowl, on 50% power, for 30 seconds at a time. Do NOT overheat. Chop almonds in food processor. Dip bottom of macaroon cookies in white chocolate, then almonds and place on wax paper to set. Drizzle remaining chocolate over tops of cookies. Allow chocolate to set before indulging.
