1 1/2 cups sugar
3 tablespoons cornmeal
2 tablespoons all-purpose flour
1/4 teaspoon salt
4 large eggs, lightly beaten
1 teaspoon vanilla extract
1/4 cup butter or 1/4 cup margarine, melted
1 (3 1/2 ounce) can coconut
1 (15 1/4 ounce) can crushed pineapple, drained well
1 unbaked 9-inch pie shell

Steps:

  • Combine first 4 ingredients in a large bowl. Add eggs and vanilla, stirring until blended.
  • Stir in butter, coconut, and pineapple. Pour into unbaked pastry shell.
  • Bake at 350 degrees for 1 hour or until set, covering with aluminum foil after 40 minutes.

1 ½ tablespoons cornmeal
1 ½ cups white sugar
1 tablespoon all-purpose flour
1 tablespoon lemon juice
½ teaspoon vanilla extract
½ cup margarine, melted
3 eggs, beaten
1 cup flaked coconut
1 cup chopped pecans
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a medium bowl, mix together cornmeal, sugar, flour, lemon juice, vanilla and margarine. Mix in eggs until well blended. Stir in coconut and pecans. Then pour mixture into pie crust.
  • Bake in preheated oven for 50 to 55 minutes. Be sure to cover pie with foil. Take off foil when there are 10 to 15 minutes left of bake time.
  • Pie will be somewhat "shaky" when removed from oven, but will firm up as it cools.

Such an easy, yummy pie! Enjoy! Make sure you use a 9 inch, standard pie plate as I didn't and it ran over. I had a store bought crust (which was smaller than the average pie plate) I wanted to use up. Fresh crust is best.

1 1/2 c sugar
2 1/2 tsp flour
3 Tbsp corn meal
1/4 tsp salt
4 large eggs, softly beaten
1 tsp vanilla extract
4 Tbsp melted butter
1 1/2 c coconut
1 - 20 oz can crushed pineapple - drained really well

Steps:

  • 1. Preheat oven to 350 degree F. In a medium bowl. mix together the sugar, flour corn meal and salt.
  • 2. Beat in the eggs, butter and vanilla. Stir in the pineapple and coconut.
  • 3. Pour into your unbaked crust.
  • 4. Bake for 45- 55 minutes or until set. If it begins to brown too much before setting, cover with foil. Inserted knife should come out clean. Mine was done in 45 minutes, but I wasn't able to fit all of the filling in my pie crust.
  • 5. Cool on rack. Although we have been known to eat ours warm. LOL!

1 large egg
4 large egg yolks
2/3 cup sugar
2/3 cup light brown sugar, packed
1/2 teaspoon salt
2/3 cup buttermilk
1/3 cup heavy cream
6 tablespoons unsalted butter, cut into small pieces
1 1/2 cups sweetened flaked coconut

Steps:

  • Preheat the oven to 300°F Prick the frozen pie shells all over with a fork and partially bake the shells for about 8 minutes, until they start to puff slightly.
  • Meanwhile, place the egg, yolks, sugars, salt, buttermilk, cream and butter in a stainless-stell mixing bowl. Set the mixing bowl over a pot of boiling water. Whisk the mixture constantly, until no yello streaks remain and the mixture is shiny and warm to the touch, about 3 or 4 minutes. Stir in the coconut and pour the filling into the crusts. Bake until golden and firm, 50 to 65 minutes. Makes 2 pies, with 12 to 16 servings total.
