"I love this tender cake because I usually have the ingredients on hand and it mixes up in a jiffy," relates Ellen Champagne of New Orleans, Louisiana. "The rich fudge frosting is easy to prepare, and the chopped pecans add nice crunch.

1 package white cake mix (regular size)
1 cup cola
2 large eggs, room temperature
1/2 cup buttermilk
1/2 cup butter, melted
1/4 cup baking cocoa
1 teaspoon vanilla extract
1-1/2 cups miniature marshmallows
FUDGE FROSTING:
1/4 cup baking cocoa
1/2 cup butter, cubed
1/3 cup cola
4 cups confectioners' sugar
1 cup chopped pecans, toasted

Steps:

  • In a large bowl, combine the first seven ingredients; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fold in marshmallows. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack for 15 minutes., Meanwhile, for frosting, combine cocoa and butter in a small saucepan. Cook over low heat until butter is melted. Stir in cola until blended. Bring to a boil, stirring constantly. Remove from the heat; stir in confectioners' sugar until smooth. Fold in pecans. Spread over cake. Let stand for 20 minutes before cutting.

1 package (18-1/4 ounces) white cake mix
1 cup of regular cola
2 large eggs
1/2 cup of buttermilk
1/2 cup or butter (melted)use real butter
1/4 cup baking cocoa
1 teaspoon vanilla extract
1-1/2 cups of miniature marshmallows
FUDGE FROSTING
1/4 cup baking cocoa
1/2 cup butter cubed
1/3 cup cola
4 cup confectioners sugar
1 cup of chopped walnuts or pecans, toasted

Steps:

  • 1. 1-In a large bowl,combine the cake mix ,cola,eggs,buttermilk,butter,cocoa,vanilla;Beat on low speed for 30 seconds.Beat on medium for 2 minutes.Fold in the marshmallows.Pour into a greased 13x9 inch baking pan.......I spray pan with Baker Joy...

  • 3. 3-Meanwhile for frosting ;In a small saucepan ,combine cocoa and butter.Cook over LOW heat untill butter is melted.Stir in cola until blended.Bring to a boil ,stirring constantly.Reamove from the heat ;stir in confectioners sugar untill smooth.Fold in Walnuts or Pecans .Spread over cake .Let stand for at least 30 minutes before cutting...
