Oooey, Gooey, Rich and Chewy. If you are a fan of cake-like brownies, these are NOT for you. This makes a small pan of brownies that are moist and dense and need no icing. They form a crust that cracks and is a wonderful contrast to the fudgy texture of the brownie. Like all other basic brownie recipes, these are a great base for adding in chunks of chocolate, nuts, or whatever. As an adult, I like them with a 1/2 tsp of espresso powder added. For the brownie purist, the nuts are strictly optional. When I'm having one of those "must have chocolate" days, these are the perfect fix. After 1 brownie, I'm cured.

  • Position a rack in the lower third of the oven and preheat the oven to 325°F. Line the bottom and sides of the baking pan with parchment paper or foil, leaving an overhang on two opposite sides.
  • Combine the butter, sugar, cocoa, and salt in a medium heatproof bowl and set the bowl in a wide skillet of barely simmering water. Stir from time to time until the butter is melted and the mixture is smooth and hot enough that you want to remove your finger fairly quickly after dipping it in to test.   • With mixer on low/med beat just till mixed.

Steps:

  • Make the brownies: Preheat the oven to 325˚. Line a 9-by-13-inch baking pan with foil, leaving a 2-inch overhang on all sides; coat with cooking spray. Whisk the flour, cocoa powder, baking powder, baking soda and salt in a medium bowl.
  • Melt the butter and milk chocolate in a pot over medium-low heat, stirring. Remove from the heat and whisk in both sugars. Whisk in the eggs, one at a time, then the vanilla and milk. Gently whisk in the flour mixture until just combined. Spread the batter in the prepared pan.

2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
1 1/3 cups sugar
1/2 cup cocoa
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/4 cup chopped nuts (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Place eggs in mixing bowl.
  • Beat till slightly frothy.
  • Add oil, vanilla; mix well.
  • Stir in sugar and cocoa.
  • Mix well.
  • Stir in flour, salt and nuts till well blended.
  • Pour into vegetable oil sprayed 9x9" pan.
  • Bake at 350 degrees for 22 to 26 minutes.
  • (Don't overbake!).
  • Cool, cut into bars.

Mmmm! :) Feel free to add in chopped nuts, chocolate chips or coconut flakes. Ive also posted a healthified version of this recipe for those of us watching their weight.

3 ounces firm silken tofu
1/4 cup non-dairy milk (like e.g. soy)
1/2 cup canola oil
1 cup sugar
2 teaspoons vanilla extract
1 cup flour
1/2 cup unsweetened cocoa powder
1 tablespoon cornstarch
1/2 teaspoon baking powder
1/2 teaspoon salt

Steps:

  • Puree the tofu, non-dairy milk and oil until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and vanilla.
  • Sift in flour, cocoa powder, cornstarch, baking powder and salt.
  • Use a spatula to mix batter until smooth. Transfer to an 8X8 greased baking pan and smooth out the top.
  • Bake in the preheated oven at 325°F/150°C for 25 minutes or until set.
  • Remove from the oven and let the brownies cool for at least 15 minutes before slicing and serving.
  • Enjoy.

1/4 cup soy yogurt
3 tablespoons water
1/2 cup unsweetened applesauce
1/4 cup dark brown sugar (unpacked)
2 teaspoons vanilla extract
3/4 cup whole wheat flour (I use whole spelt flour)
1/4 cup flour (I use spelt flour)
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 pinch salt
1 teaspoon cinnamon
1/8 teaspoon pumpkin pie spice

Steps:

  • Puree the tofu, yogurt, water and applesauce until smooth and fluffy. Transfer to a mixing bowl. Use a fork to vigorously mix in the sugar and vanilla.
  • Sift in flours, cocoa powder, baking powder, cinnamon, pumpkin pie spice and salt.
  • Use a spatula to mix batter until smooth. Transfer to an 8X8 greased baking pan and smooth out the top.
