I just happened to see this Double Chocolate Coca Cola Cake recipe on facebook from an old school friend. Her mother use to make this cake when we were kids and I remembered way back then when she brought it over for us to try. It was so good and brought back happy memories.

1 c coca-cola (not diet)
1/2 c cooking oil
1 stick butter
3 Tbsp cocoa
2 c sugar
2 c plain flour
1/2 tsp salt
2 eggs
1/2 c buttermilk
1 tsp baking soda
1 tsp vanilla.
frosting ingredients
1 stick butter
2 1/3 Tbsp cocoa
6 Tbsp cream or milk
1 tsp vanilla
3 3/4 c confectioners sugar

Steps:

  • 1. In a saucepan mix cola, oil, butter and cocoa and bring to boil. In bowl combine sugar, flour and salt. Pour the Cola mixture over the flour mixture and beat well.
  • 2. Add eggs, buttermilk, baking soda and vanilla and beat well. Pour mixture into a greased and floured 13x9 inch baking pan. Bake at 350 degrees for 20 to 25 minutes.
  • 3. Frosting: In a saucepan, combine butter, cocoa, and milk. Heat until butter melts. Beat in remaining ingredients and spread on cake while still warm.

The icing is a bit thin if you follow directions, it's more like a glaze, so I think it needs maybe another cup of powdered sugar.

2 cups sugar
2 cups flour
1/2 cup margarine
1/2 cup shortening
3 tablespoons cocoa or 1 melted baking chocolate square
1 cup Coke
1/2 cup buttermilk
1 teaspoon vanilla
2 eggs, beaten
1 1/2 cups small marshmallows
1/2 cup butter or 1/2 cup margarine
3 tablespoons cocoa
1 cup pecans, chopped
6 tablespoons Coke
1 lb powdered sugar

Steps:

  • Sift flour and sugar together.
  • Combine the margarine, shortening, cocoa and cola in saucepan and bring to boil. Add the chocolate mixture to sugar-flour mixture. Add buttermilk, soda, vanilla and beaten eggs.

1 c coca cola, regular
1/2 c oil
1 stick butter, softened
3 Tbsp cocoa powder
2 c sugar
2 c flour
1/2 tsp salt
2 eggs
1/2 c buttermilk

1 stick butter
3 Tbsp cocoa powder
3 oz whipping cream
