CLEVER CONNIE'S SWEET & SOUR PORK CHOPS

Clever Connie's Sweet & Sour Pork Chops image

I work with developmentally-challenged adults - a few without dentures, some without the motor-skills to handle knives and forks. My extraordinarily clever supervisor came up with this recipe allowing them (and a spoon) to enjoy the taste of a good pork chop. The meat falls from the bone and shreds easily. The sauce creates a taste of China.

Categories     Pork

Time 2h10m

Yield 4 serving(s)

Number Of Ingredients 7

4 pork chops
1 tablespoon oil
2 garlic cloves, minced
1 cup brown sugar
1 cup tomato ketchup
1/4 cup soya sauce
1 cup water

Steps:

  • Set the oven at 250 degrees Fahrenheit.
  • Trim excess fat off the pork chops.
  • Add oil to frying pan and heat on high.
  • Add garlic and swirl around for 30 seconds- don't let it brown or burn.
  • Lower heat under frying pan. Brown the chops on both sides.
  • Remove chops and place in an ovenproof baking dish in a single layer.
  • Scrape the garlic and "brown bits" from the frying pan onto the top of the chops.
  • Mix remaining ingredients together well and pour over the chops.
  • Place chops into the oven.
  • Lower heat to 200 degrees Fahrenheit.
  • Leave chops in the oven for 2 hours or more.
  • When the chops come from the oven - the longer the better - the meat will fall from the bones and the fat is easily removed.
  • Shred the pork and return it to the "sauce".
  • Leave the meat in the oven until you are ready-to-serve.
  • Serve over rice.

Tips:

  • Choose the right pork chops: Look for pork chops that are about 1 inch thick and have a good amount of marbling. This will help ensure that the pork chops are juicy and flavorful.
  • Use a flavorful marinade: The marinade is what will give the pork chops their flavor, so make sure to use a marinade that you like. The recipe in the article uses a marinade made with soy sauce, brown sugar, garlic, and ginger, but you can use any marinade that you like.
  • Cook the pork chops over medium heat: Cooking the pork chops over medium heat will help to prevent them from drying out. If you cook the pork chops over high heat, they will likely be tough and overcooked.
  • Use a meat thermometer to check the internal temperature of the pork chops: The best way to ensure that the pork chops are cooked through is to use a meat thermometer. The pork chops are done when they reach an internal temperature of 145 degrees Fahrenheit.
  • Let the pork chops rest before serving: Letting the pork chops rest before serving will help to keep them juicy. When you cut into a pork chop that has just been cooked, the juices will run out. If you let the pork chops rest for a few minutes, the juices will have time to redistribute throughout the meat, resulting in a more flavorful and juicy pork chop.

Conclusion:

Sweet and sour pork chops are a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are marinated in a flavorful mixture of soy sauce, brown sugar, garlic, and ginger, then cooked over medium heat until they are cooked through. The sweet and sour sauce is made with pineapple juice, vinegar, brown sugar, and ketchup, and it is poured over the pork chops before serving. Sweet and sour pork chops are a great way to enjoy pork chops, and they are sure to be a hit with your family and friends.
