Time 43m

Yield 6 to 8 servings

Number Of Ingredients 6

3 clementines, plus 1 very thinly sliced, for garnish
1 cup sugar
1 cup water
2/3 cup cranberry juice
1/3 cup lime juice
1 1/2 cups vanilla flavored vodka (recommend: Grey Goose)

  • Cut the clementines into quarters and squeeze their juice into a saucepan. Add the sugar, water and clementine flesh and bring to a boil over medium heat. Reduce the heat and simmer the mixture for 5 minutes. Pour into a strainer set over a measuring cup, pressing on the solids to remove as much liquid as possible. Discard the solids, cool the liquid to room temperature and pour into a pitcher. Add the cranberry juice, lime juice and vodka and stir well. Refrigerate until ready to serve. Put 6 or 8 martini glasses in the freezer.
  • To serve, pour the mixture into an ice-filled cocktail shaker and shake until very cold. Pour into the chilled martini glasses and garnish each with a clementine slice. Drink up and enjoy!

CLEMENTINE COSMOS

Clementine Cosmos image

I was watching a Claire Robinson holiday show; she does the "5 Ingredients or Less" show on the food channel. I had just purchased a crate of clementines at the store that day and happened to stumble on this episode where she mentioned the crates of clementines available during the holidays. I never associated them with the holidays before and now I'm so glad I know since I come across a lot of clementine recipes on 'Zaar and haven't always been able to find them. In case you're counting, this does have 5 ingredients if you ignore the water and garnish! Happy holidays! Cheers!

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 7

1 cup sugar
1 cup water
3 clementines, quartered
2/3 cup cranberry juice
1/3 cup lime juice
1 1/2 cups vanilla vodka
1 clementine, sliced for garnish

Steps:

  • Chill 6-8 martini glasses by filling with ice and water. Set aside while you prepare the beverage.
  • To make simple syrup, add sugar and water to medium saucepan. Juice the clementine quarters into the pan by squeezing them and then drop the spent rinds into the pan. Simmer until thickened, about 10 minutes. Strain into a glass measuring cup and set aside to cool.
  • To make the cosmos, place the cooled clementine simple syrup into a cocktail pitcher. Add the cranberry juice, lime juice, and vanilla vodka. Cover the pitcher and shake vigorously to blend or stir vigorously. Pour into empty chilled martini glasses.

CLEMENTINE CAKE

Clementine Cake image

This dessert, loosely based on a Sephardic orange cake, uses whole clementines, peels and all, for a flavor rich in citrus. The cooking time may seem long, but much of it doesn't require much attention from the baker. And the first step, reducing the fruit, may be done ahead of time.

Time 3h45m

Yield 8 to 12 servings

Number Of Ingredients 8

5 medium clementines (about 375 grams)
Spray cooking oil
6 large eggs
1 cup sugar
1 teaspoon salt
2 cups almond flour or very finely ground blanched almonds
2 teaspoons baking powder
Powdered sugar, chocolate glaze or candied clementines, for garnish

Steps:

  • Place whole unpeeled clementines in a large pot, cover with cold water and bring to a boil over high heat. Reduce heat to low, cover and simmer gently for 2 hours, adding more water as needed. Remove clementines with a slotted spoon and, once cool enough to handle, halve and remove any seeds or other hard bits. Purée in a food processor or blender and set aside. (May be done up to 2 days ahead and refrigerated.)
  • Heat oven to 350 degrees. Spray a 9-inch springform pan with cooking oil, line bottom with parchment paper and spray paper with oil.
  • In a large bowl, whisk the eggs together with the sugar, salt and clementine purée. Add the almond flour and baking powder and stir until just combined.
  • Pour into prepared pan and bake until edges are golden brown and starting to pull away from sides of pan, about 1 hour. Transfer to wire rack set over baking sheet. After 10 minutes, run a knife around edge of pan to loosen cake; remove cake from pan. Peel off parchment paper and return cake to wire rack to cool completely. Decorate with dusting of powdered sugar, or with chocolate glaze and/or candied clementines.

Tips:

  • For the best flavor, use fresh clementines. If you can't find clementines, you can substitute other citrus fruits, such as oranges, grapefruits, or tangerines.
  • To make the clementine simple syrup, be sure to use equal parts sugar and water. If you use too much sugar, the syrup will be too thick and won't dissolve properly in the cocktail.
  • If you don't have a cocktail shaker, you can use a jar with a tight-fitting lid. Just be sure to shake the jar vigorously for at least 10 seconds.
  • Garnish your Clementine Cosmos with a twist of clementine or a sprinkle of cinnamon.
  • Serve Clementine Cosmos immediately.

Conclusion:

Clementine Cosmos are a refreshing and festive cocktail that is perfect for any occasion. They are easy to make and can be tailored to your own taste. So next time you're looking for a delicious and unique cocktail, give Clementine Cosmos a try!
