Time 55m

Yield frosting for 1 layer cake

Number Of Ingredients 5

2 cups sugar
1/2 cup water
4 egg whites
1 pound butter, cut up
1 to 2 teaspoons vanilla extract

Steps:

  • In a small clean dry saucepan, place 2 cups sugar and then pour 1/2 cup water down the sides of the pan. Make an X in the sugar with 1 finger to encourage the water to seep into the middle of the pan of sugar. Bring to a boil and cook until softball stage or 235 degrees F on a candy thermometer.
  • Meanwhile, in a mixer with a whip attachment, whip the whites until they form soft peaks. When the syrup is up to temperature, drizzle it down the wall of the mixing bowl with the mixer running. Continue whipping until light, fluffy and almost cooled down. Start adding the butter a few cubes at a time to cool the frosting and thicken it. When it gets thick you can stop adding butter; you may not use the whole pound (it depends on how much water you cooked out of your syrup). Add vanilla extract to taste.

Tips:

  • Use unsalted butter: This allows you to control the amount of salt in the buttercream, and prevents it from becoming too salty.
  • Bring the butter to room temperature: This will make it easier to cream together with the sugar, resulting in a smooth and fluffy buttercream.
  • Cream the butter and sugar together until light and fluffy: This will take several minutes, but it's important to be patient. The longer you cream the butter and sugar, the lighter and fluffier the buttercream will be.
  • Add the vanilla extract and salt: These ingredients will help to flavor the buttercream and balance out the sweetness.
  • Gradually add the milk or cream: This will help to prevent the buttercream from curdling.
  • Beat the buttercream until it reaches the desired consistency: If you want a stiffer buttercream, beat it for longer. If you want a softer buttercream, beat it for less time.
  • Use the buttercream immediately or store it in the refrigerator: Buttercream can be stored in the refrigerator for up to 2 weeks.

Conclusion:

Vanilla buttercream is a classic frosting that is perfect for cakes, cupcakes, and other desserts. It is easy to make and can be customized to your liking. With these tips, you can make a delicious and beautiful vanilla buttercream that will impress your friends and family.
