1 large zucchini, finely diced
1 red bell pepper, finely diced
1 yellow pepper, finely diced
5 cloves garlic, smashed to a paste with coarse salt
1/2 teaspoon red pepper flakes, divided
Salt and freshly ground black pepper
2 large eggs, lightly beaten
1 tablespoon finely chopped fresh thyme leaves
1/4 cup chopped fresh parsley leaves, plus more for garnish
1/2 pound ground pork
1/2 pound ground veal
1 pound ground beef chuck
1 cup panko (Japanese) bread crumbs
1/2 cup freshly grated Romano or Parmesan
1 cup ketchup, divided
1/4 cup plus 2 tablespoons balsamic vinegar

Steps:

  • Preheat oven to 425 degrees F.
  • Heat the oil in a large saute pan over high heat. Add the zucchini, peppers, garlic paste, 1/4 teaspoon red pepper flakes, and salt and pepper, to taste, and cook until almost soft, 5 minutes. Set aside to cool.

1 rib celery, coarsely chopped
½ onion, coarsely chopped
½ red bell pepper, coarsely chopped
4 white mushrooms, coarsely chopped
3 cloves garlic, coarsely chopped
2 ½ pounds ground chuck
1 tablespoon Worcestershire sauce
1 egg, beaten
1 teaspoon dried Italian herbs
2 teaspoons salt

1 cup plain bread crumbs
1 teaspoon olive oil
2 tablespoons brown sugar
2 tablespoons ketchup

Steps:

  • Preheat the oven to 325 degrees F.

  • Bake in the preheated oven just until the meatloaf is hot, about 15 minutes.
  • Meanwhile, in a small bowl, mix together brown sugar, ketchup, Dijon mustard, and hot sauce. Stir until the brown sugar has dissolved.
  • Remove the meatloaf from the oven. With the back of a spoon, smooth the glaze onto the top of the meatloaf, then pull a little bit of glaze down the sides of the meatloaf with the back of the spoon.

1/3 c ketchup
1 Tbsp ketchup
1 Tbsp garlic powder

1 1/2 lb ground beef
14 1/ oz beef broth
1 large sweet potato, peeled and quartered
2 potatoes, peeled and quartered
4 carrots, peeled and sliced
2 eggs

Steps:

  • 1. Preheat oven to 375.
  • 2. Mash bread, eggs and 3 tablespoons worcestershire sauce in large bowl until smooth paste forms.
  • 3. Mix in onion, 1/3 cup ketchup, garlic powder, salt and pepper.
  • 4. Add beef and mix thoroughly.
  • 5. Mound meat mixture in 13x9x2-inch baking pan, shaping into 8x4-inch loaf.
  • 6. Spread remaining 1 tablespoon ketchup over meat loaf.
  • 7. Pour broth and remaining 1 tablespoon worcestershire sauce into pan around meat loaf.
  • 8. Arrange vegetables around meat loaf.
  • 9. Cover pan with foil.

2 cups sweet onions, finely chopped
1 tablespoon garlic
1 celery rib, finely chopped

1 cup ketchup, divided
1 tablespoon brown sugar
1 1/2 lbs ground round (or chuck)
1/2 lb ground pork sausage (such as Jimmy Dean)
1 cup bread, crumbs fine
2 eggs, lightly beaten

Steps:

  • Preheat Oven to 350 degrees F; position oven rack to middle of the oven.
  • Melt butter in heavy skillet and saute onions, garlic and celery for approximately 4-5 minutes; until onions are translucent.
