2 cups frozen baby lima beans
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup chopped celery
1/2 cup milk
1 cup shredded cheddar cheese
1/4 cup seasoned bread crumbs

Steps:

  • In a bowl, combine lima beans, soup, celery and milk. Pour into a greased 11x7-in. baking dish. Sprinkle with cheese and bread crumbs. , Cover and bake at 350° for 25 minutes. Uncover; bake 10 minutes longer or until the bread crumbs are lightly browned.

1 lb fresh lima beans or 1 lb frozen lima beans, cooked until tender
1/4 lb bacon, chopped fried until translucent
1 medium onion, chopped
1 medium green pepper, chopped
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
salt
3/4 cup grated monterey jack cheese

Steps:

  • If you are using fresh or frozen cover the beans with water and bring to a boil, skim the surface& simmer untiltender about 25 minutes for fresh, 6 minutes for frozen.
  • Canned Lima beans just heat& drain throughly.
  • Grease an oven proof pan (Deep Casserole).
  • Fry the bacon until translucent,m add onions& pepper saute for about 6 minutes Add beans and cook until hot, stirring frequently About 5 minutes.
  • Add tomatoe sauce& stewed tomatoes.
  • Cover and simmer for 10 minutes.
  • Uncover and simmer until most of the juice has evaporated about 20 minutes.
  • Pour into the casserole dish.
  • You can do the recipe up to here the day ahead, refrigerate. Bring to room temperature before putting in the oven) Heat oven to 450 degrees F.
  • Sprinkle with the cheese, bake until hot with the cheese is melted and lightly browned Apprx 20-25 minutes.
  • If you are going from start to finish with this recipe without refrigerating you will only want to have it in the oven for apprx 15 minutes just to get the lovely color to the cheese and have it bubbly
  • Serve immediately - hot

3/4 cup chopped onion
1/2 cup chopped red bell pepper
1 box (9 oz) frozen corn, thawed
1 box (9 oz) frozen baby lima beans, thawed
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon dried thyme leaves
1 teaspoon salt
1 teaspoon pepper
1/4 teaspoon ground mustard
1 cup milk
1 cup shredded mild Cheddar cheese (4 oz)
1/4 cup Progresso™ plain bread crumbs

Steps:

  • Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In 12-inch skillet, melt 1 tablespoon of the butter over medium heat. Add onion, bell pepper, corn and lima beans. Cook about 5 to 8 minutes, stirring frequently, until vegetables are crisp-tender. Remove vegetables to large bowl; set aside.

16 oz package of dry small lima beans
6 Tbsp baking soda
3/4 c yellow onions, chopped
1 Tbsp salt and pepper
1 Tbsp finely chopped garlic
1 lb beef sausage in casing

Steps:

  • 1. In a medium sauce pan put beans and baking soda and cover with water.
  • 2. Bring to a rapid boil then remove from the stove and rinse beans in cold water, removing all baking soda. This step eliminates having to soak the beans overnight.
  • 3. Put beans, onions, garlic and salt & pepper in a medium sauce pan and cover with water.
  • 4. Cut sausage into 2" pieces and add to pot. Bring water to a boil and then reduce heat to a simmer. Continue to simmer until beans are cooked, adding water as needed to keep the beans from sticking.
  • 5. Watch beans closely as the water will cook down quickly and you will need to replenish it often. Beans should be soupy when finished.

1 small onion, chopped fine
1 medium red or green pepper, chopped
3 c frozen lima beans
1 can(s) cream of celery soup
1/2 c bread crumbs
1/2 - 3/4 c grated cheddar cheese

Steps:

  • 1. Saute the onion and pepper in the butter or olive oil just until tender. Mix well with the beans and soup.
  • 2. Pour mixture into a 2 to 3-quart baking dish. Top with the bread crumbs and grated cheese.
  • 3. Bake in a preheated oven at 350 degrees for 30 to 40 minutes.
