1 1/2 tablespoons finely chopped white onion
1 tablespoon plus 2 teaspoons finely chopped fresh cilantro
1 1/4 teaspoons jalapeno, seeded and finely chopped
1/2 teaspoon coarse salt, plus more for seasoning if desired
1 ripe Hass avocado, pitted, peeled, and coarsely chopped
3 tablespoons tomato, seeded and finely chopped

Steps:

  • With a large mortar and pestle, mash onion, 1 tablespoon cilantro, jalapeno, and salt until smooth and juicy. Add avocado, and mash slightly (avocado should remain somewhat chunky). Stir in tomato and remaining 2 teaspoons cilantro. Season with salt, if desired. Use immediately.

The flavors not only become more intense, but actually change in character. This is just what those bland, fatty, but delectable avocados need. That and a thoughtful seasoning of lime juice, and maybe some more salt.

2 tablespoons minced fresh serrano chili
½ cup chopped fresh cilantro, divided
¼ cup finely diced white onion
½ teaspoon kosher salt for grinding vegetables, plus more to taste
4 large Hass avocados
1 cup diced ripe tomatoes, drained
1 lime, juiced, or more to taste

Steps:

  • Place minced peppers, 1/4 cup of the chopped cilantro, and the diced onions on a cutting board. Chop them together into very small pieces. Sprinkle with kosher salt.
