1 small head green cabbage
1/2 small head red cabbage
3/4 cup mayonnaise
1/4 cup white wine vinegar, such as Chardonnay

CLASSIC COLESLAW

Classic Coleslaw image

Hattie B's version of this traditional fried chicken side tastes like coleslaw should: crunchy, a little creamy, and with enough vinegar to keep it bright. Best of all: It will help put out the fire.

Categories     Salad     Side     Kid-Friendly     Quick & Easy     Spring     Summer     Cabbage     Bon Appétit     Vegetarian     Pescatarian     Paleo     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher     Small Plates

Yield 8 servings

Number Of Ingredients 9

1 cup mayonnaise
1 1/2 tablespoons apple cider vinegar
1 tablespoon honey
3/4 teaspoon celery seeds
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 medium green cabbage, very thinly sliced (about 4 cups)
1/2 medium red cabbage, very thinly sliced (about 4 cups)
2 medium carrots, peeled; julienned or grated

Steps:

  • Whisk mayonnaise, vinegar, honey, celery seeds, salt, and pepper in a large bowl to combine. Add green and red cabbage and carrots to dressing and toss to coat. Cover and chill until ready to serve.
  • Do ahead: Coleslaw can be made 8 hours ahead. Keep chilled.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the coleslaw to have a crisp texture.
  • If you don't have a mandoline, you can use a food processor fitted with the slicing blade. Just be careful not to over-process the cabbage and carrots, or they will become mushy.
  • Use a large bowl to mix the coleslaw. This will give you plenty of room to stir and coat the vegetables with the dressing.
  • Be sure to taste the dressing before adding it to the coleslaw. You may need to adjust the seasonings to your liking.
  • Serve the coleslaw immediately, or chill it for at least 30 minutes before serving. This will allow the flavors to meld and develop.

Conclusion:

Coleslaw is a classic side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. Whether you like it creamy, tangy, or sweet, there is a coleslaw recipe out there for you. So next time you are looking for a quick and easy side dish, give coleslaw a try. You won't be disappointed!
