HOMEMADE ICE CREAM SANDWICHES
Meet the Cook: My mom sent me this recipe. We love it, and so does company I serve it to. I inherited my love of cooking from my mother. She's a former home economics teacher. When we were growing up, each of us five kids had a night a week when we planned and prepared supper for the rest of the family. Our home is "way out in the sticks", 15 miles from town and 5 miles from the nearest neighbor. My husband and I have a son, 20, and a daughter, 17. -Kea Fisher, Bridger, Montana

Tips:
- Use high-quality chocolate. The quality of the chocolate you use will greatly impact the flavor of your ice cream sandwiches. Look for chocolate that is at least 60% cacao content.
- Make sure your ice cream is firm. If your ice cream is too soft, it will be difficult to scoop and will make your sandwiches messy. Freeze your ice cream for at least 4 hours before assembling the sandwiches.
- Work quickly when assembling the sandwiches. The ice cream will start to melt quickly, so work quickly to assemble the sandwiches and get them back in the freezer.
- Don't skimp on the toppings. Toppings are what really make ice cream sandwiches special. Get creative and use your favorite toppings, such as sprinkles, chopped nuts, or chocolate chips.
Conclusion:
Classic chocolate ice cream sandwiches are a delicious and refreshing treat that is perfect for any occasion. With just a few simple ingredients, you can make your own ice cream sandwiches at home that are just as good as the ones you buy in the store. So next time you're craving a sweet treat, try making a batch of these classic chocolate ice cream sandwiches. You won't be disappointed!
