CLARA'S GROUND BEEF CHOP SUEY
This was my mother's (Clara) recipe. I have no idea where she got it but this was a staple at our house for years. All of us children (5) have tried to make this recipe taste like hers. We can come close but it never tastes as good as when she made it. Maybe it was the love. She died at the age of 86 and I'm posting this recipe in her memory.

Tips:
- Use high-quality ground beef: Choose lean ground beef with a fat content of 80% or less. This will help to ensure that your chop suey is not too greasy.
- Chop the vegetables evenly: This will help them to cook evenly and prevent some pieces from becoming overcooked while others are still raw.
- Use a large skillet or wok: This will give the ingredients plenty of room to cook and prevent them from overcrowding.
- Cook the ground beef in batches: If you try to cook all of the ground beef at once, it will not cook evenly. Instead, cook it in batches, removing it from the skillet or wok once it is browned.
- Add the vegetables to the skillet or wok in stages: This will help to prevent them from becoming overcooked. Start by adding the vegetables that take the longest to cook, such as carrots and celery, and then add the vegetables that cook more quickly, such as bean sprouts and water chestnuts.
- Use a good-quality soy sauce: The soy sauce is one of the key ingredients in chop suey, so it is important to use a good-quality brand. Look for a soy sauce that is made with natural ingredients and has a rich, flavorful taste.
- Serve chop suey over rice: Chop suey is traditionally served over rice. This helps to soak up the sauce and makes the dish more filling.
Conclusion:
Clara's Ground Beef Chop Suey is a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The combination of ground beef, vegetables, and soy sauce creates a flavorful and satisfying dish that is sure to please everyone at the table. So next time you are looking for a quick and easy meal, give Clara's Ground Beef Chop Suey a try.
