SHELLFISH AND ANDOUILLE GUMBO WITH SHRIMP, SCALLOPS, CLAMS AND OYSTERS WITH CRISPY OKRA

- For the gumbo base: Heat a medium skillet over high heat. Add the andouille and cook until golden brown on both sides. Remove to a plate lined with paper towels. Do not drain. In the same pan, cook the celery, carrots, onion, bell pepper and garlic until soft.
- Melt the butter over medium heat in a large Dutch oven. Gradually add the flour, stirring occasionally. Cook the mixture (roux) until it's a light-caramel color, about 5 to 7 minutes. Add the onion mixture and cook for about 3 minutes, without stirring.
- Bring the stock to a boil in a large saucepan. Whisk in about 6 cups of the stock into the roux mixture. Bring to a boil, then reduce the heat to a simmer, add the andouille sausage and continue simmering for about 20 minutes, add more stock if the mixture is too thick. Season with salt and pepper, to taste.
- For the seafood: Heat 2 tablespoon of the oil in a large saute pan, over high heat until almost smoking. Season the scallops with salt and pepper and sear the scallops, on one side, until golden brown, about 2 minutes. Remove and set aside on a plate.
- Wipe out the skillet and add the remaining olive oil. Heat over medium-high until almost smoking. Season the shrimp with salt and pepper and cook until just pink, about 3 to 4 minutes. Remove and set aside with the scallops.
- Add the scallops, shrimp, oysters and crab to the sauce and continue cooking until oysters are plump and cooked.
- For the Crispy Okra: Heat 2-inches of canola oil in a high sided saute pan over medium heat until it begins to shimmer. Line a baking sheet with paper towels.
- Place the cornmeal in a shallow baking dish and season with salt and pepper.
- Season the okra with salt and pepper and toss in the cornmeal. Fry the okra, in batches, until golden brown. Remove with a slotted spoon to the baking sheet and season with salt.
- Divide the seafood among 4 shallow bowls, ladle in some of the sauce and sausage and add the honey and garnish with the fried okra and chopped parsley and cilantro.
- In a large saucepan over high heat, heat the oil until amost smoking and saute the shrimp shells and tails, onion, carrot and celery for 5 minutes, stirring. Add the water, wine, tomato and bay leaf. Reduce to medium, partly cover, and simmer 40 minutes.
- Strain though cheesecloth or a fine strainer.

- Fill a huge stockpot, preferably fitted with a basket insert, with about 4 quarts of water. Keep in mind that when you add the solid ingredients the water level will rise, so don't fill the pot up more than halfway. Squeeze the lemons into the water, tossing in the halves too. Add the bay leaves, salt, seasoning, thyme, onions, chiles and garlic; bring the broth to a boil over medium-high heat and simmer for 10 minutes. You want a very aromatic broth with plenty of salt and spices. Taste it; don't be afraid to make it strong so some of the flavor can penetrate and get absorbed by the potatoes and other ingredients. Adjust seasoning with salt.

- For the paella: Add the chicken stock, saffron threads and shrimp shells to a medium saucepan and simmer, covered, for 10 minutes.
- Meanwhile, coat the paella pans generously with olive oil. Add the chorizo, dividing it between the two pans. Set the pans over medium-low heat and cook, stirring occasionally, until the fat has rendered and the chorizo is crispy, 5 to 7 minutes. Add the chicken to the pans and season with salt. Cook, stirring occasionally, until the chicken is beginning to brown, but isn't cooked all the way through.
- Add the garlic, celery, onions, peppers and tomato to a food processor and pulse until chopped into a coarse paste. Add to the paella pans and cook until all of the liquid has evaporated and the veggies are soft and slightly caramelized, about 10 minutes. Add the peas and cook 2 to 3 minutes.

- Heat a large soup pot with extra-virgin olive oil over medium-high heat. Add the kielbasa and brown for 2 minutes; add the potatoes, onions, celery, bay, thyme, and pepper and let the veggies soften up 10 minutes, stirring occasionally. Next add the garlic and the corn and stir to combine.

- Twist the heads off the shrimp and place the heads in a medium bowl. Leaving the tails attached, peel off the shells, add them to the same bowl and set aside. Devein the shrimp, then add them to a medium bowl with 1 tablespoon oil, 1 crushed garlic clove, 1/4 teaspoon salt and plenty of pepper. Mix together and set shrimp aside to marinate for 30 minutes or so.
- Meanwhile, heat a large sauté pan, for which you have a lid, over high heat. Add 1 tablespoon oil, the chopped fennel and 1/8 teaspoon salt. Fry for about 5 minutes, stirring every now and then, until browned. Transfer the fennel to a plate, wipe the pan clean and return to a high heat. Add the tomatoes and cook for 3 to 5 minutes, tossing the pan every now and then until charred in places. Set the tomatoes aside. Leave the pan to cool for a couple of minutes, then wipe it clean and return to a medium heat.
- Add 3 tablespoons/45 milliliters oil to the pan along with the lemon peel, tarragon and the 5 chopped garlic cloves. Slowly fry for 5 minutes until the garlic is golden and the tarragon becomes bright green and crisp. Remove half of the tarragon and set aside, to serve.
- Increase the heat to medium-high, add the shrimp shells and heads and fry for 7 minutes, stirring every so often until crisp and pink, adjusting the heat as necessary so the garlic doesn't begin to burn. Add the tomato paste and 1/2 teaspoon salt, and fry for another 2 minutes, stirring frequently.
- Carefully pour in the Pernod and let it bubble away for a minute (it may flame), then add the stock and 2 1/2 cups/600 milliliters of water and simmer gently for 12 minutes, stirring occasionally. Use a potato masher to crush the shrimp heads a few times as they cook to release as much flavor as possible.
- Meanwhile, in a separate small pan over medium heat, add the fennel seeds and 2 tablespoons oil and cook until the seeds begin to pop. Set aside until ready to serve.
- Strain the stock, discarding the shells, heads and aromatics, then return to the same pan. (You should have about 3 1/4 cup/775 milliliters stock.) Add the lemon juice, chile flakes, cooked fennel, 3/4 of the charred tomatoes and plenty of pepper and cook at a bare simmer for 5 minutes, or until the tomatoes begin to split.
- Stir in the couscous, bring to a simmer then reduce the heat to medium. Cover the pan and cook for 5 minutes, until the couscous is cooked through but still retains a bite.
- Add the clams, cover the pan and cook until they all open, 4 to 5 minutes. Top with the remaining charred tomatoes and set aside while you fry the shrimp.
- While the clams cook, place a large, nonstick frying pan over a high heat. Once it's very hot, add half the shrimp, so as not to overcrowd the pan. Fry for about 1 1/2 minutes on each side, or until crisp and golden-brown on the outside and cooked inside, then repeat with the remaining shrimp.
- Arrange the shrimp, along with the garlic and any oil, over the couscous in the pan, then drizzle the fennel seed oil over everything. Top with the fried tarragon and serve with the lemon wedges alongside.

- Set a large, 6-quart pot with water over high heat and bring to a boil. Once boiling, season with 1/4 cup of salt. Add the buccatini to the water and stir until the water returns to a boil, about 2 minutes.
- While the pasta cooks, set a large, 14-inch saute pan over medium-high heat and 3 tablespoons of the olive oil. Once the oil is hot, add the onions, 2 teaspoons of the salt, the crushed red pepper flakes and the garlic to the pan. Cook stirring until the onions are slightly translucent, and the garlic is fragrant, about 3 minutes. Add the kale to the pan and allow to wilt slightly, about 30 seconds. Add the Soppressata to the pan and cook for another 30 seconds. Add the clams and pasta water to the pan and cook, shaking the pan until the clams just begin to start opening, about, 2 minutes.
- Add the tomatoes and yellow tomatoes to the pan. Cook until the clams are nearly completely opened, about 2 minutes longer. Season the shrimp with the Essence and add them to the pan. Cook until they begin to turn pink, about 1 minute.
- Remove the pasta from the water and add it to the pan with the clams and shrimp. Stir the ingredients in the pan and drizzle with the remaining tablespoon of olive oil and reseason with the remaining salt and fresh ground black pepper if necessary.
- Remove the pan from the heat and place on a large platter to serve. Sprinkle the parmesan cheese over top of the past and serve.

- Bring a large pot of salted water to a boil over medium high heat; add pasta and cook according to the package directions.
- Reserve 1/2 cup pasta cooking liquid, then drain the pasta and return it to the pot.
- Cut the onion into small dice, mince the garlic, and chop the thyme.
- In a large skillet, over medium heat, combine the onion, oil and 1/8 teaspoon salt; cook, stirring occasionally, until the onion begins to soften, about 8 to 10 minutes.
- Stir in garlic, thyme, and red pepper flakes, cook about 30 seconds.
- Add in chicken broth, clam juice, and bay leaf.
- Increase heat to medium and cook until liquid has reduced to about 2 cups, 7 to 10 minutes.
- Meanwhile, squeeze out 1/2 cup fresh lemon juice.
- Chop parsley.
- Whisk together cornstarch and water; stir into skillet.
- Cook until slightly thickened, about 2 minutes; remove from heat.

SAUTEED SHRIMP, CLAMS, AND PENNE

- using a large deep skillet or saute pan heat 1/2 of the oil until shimmering, add shrimp in one layer until the underside just begins to turn pink. Working your way around the pan turn each shrimp one time. When you reach your originally starting point remove shrimp in the same progression and put in a tented bowl, not tightly sealed. Add remainder of the olive oil, saute chopped shallot and minced garlic until garlic softens and begins to turn straw colored and frothy. Add chopped tomato and saute 3-4 minutes longer. Add broth/clam juices turn heat to medium and begin reduction while scraping the bottom of the pan to incorporate the "goodies" waiting to be released. This redction takes 15-20 minutes, to speed thing up you may wish to add some cornstarch to cold liquid, mix throughly then add to hot sauce. When thickened reduce heat to low, add clams and cooked shrimp, heating for about 3-5 minutes. Drain pasta, do not rinse and add to pan with the sauce mixture. Mix throughly, the starch in the pasta will further tighten the dish up, garnish with fresh parsley. Serve with rustic bread.
