Citrusy Chicken With Tequila and Rice Salad image

The chicken is marinated, then grilled. And WHOO HOO! The marinade is not tossed, but used to make the rice salad. From "Family Circle" magazine. In this recipe, McCormick's Smokehouse pepper is used. This is black pepper that has been infused with applewood smoke. You can use ordinary black pepper or try bacon salt for the salt, or adding a little liquid smoke to the marinade. Times do not include marinating time.

Grilled Citrusy Tequila Chicken Thighes image

This was a recipe I got from an orange growers cook book in Florida...Yummy

Provided by Pam Blais

Categories     Chicken

Time 4h55m

Number Of Ingredients 6

1/2 c orange juice
1/4 c lime juice
1/4 c tequila
1 tsp salt
2 Tbsp oil
six large skinless, chicken thighes, bone in

Steps:

  • 1. Place all ingredients except for chicken in a resealable bag. Add chicken and refrigerate for four hours or overnight.
  • 2. Remove from refrigerator and place marinade into a saucepan and boil for one minutes.
  • 3. Grill chicken for 5 minutes on each side and then 20 minutes more on each side, basting every 5 minutes with marinade.

Tips:

  • Choose the Right Chicken: For the best results, use boneless, skinless chicken thighs. They are more flavorful and juicy than chicken breasts.
  • Marinate the Chicken: Marinating the chicken in a mixture of citrus juices, tequila, and spices helps to infuse it with flavor and keep it moist during cooking.
  • Cook the Chicken Properly: Make sure to cook the chicken until it reaches an internal temperature of 165°F (74°C) to ensure that it is safe to eat.
  • Don't Overcook the Chicken: Overcooked chicken will be dry and tough. Cook it just until it is cooked through.
  • Serve the Chicken Immediately: Once the chicken is cooked, serve it immediately to enjoy the best flavor and texture.

Conclusion:

This citrusy tequila chicken thighs recipe is a delicious and easy way to enjoy chicken. The marinade infuses the chicken with flavor, and the cooking method keeps it moist and juicy.
