1 cup granulated sugar
2 teaspoons finely grated lemon zest
1/2 cup plus 2 tablespoons fresh lemon juice (from 3 lemons)
1/4 teaspoon coarse salt
4 ounces (1/2 cup) cold unsalted butter, cut into small pieces
4 cups vegetable oil, for deep-frying
1/2 cup all-purpose flour
1/2 cup cake flour
1 tablespoon baking powder
1 teaspoon coarse salt
4 large eggs
1/4 cup granulated sugar
1 pound ricotta cheese, drained
2 tablespoons finely grated lemon zest
1/2 teaspoon pure vanilla extract
Confectioners' sugar, for dusting

Steps:

1-1/2 teaspoons grated lemon zest

3 large eggs, room temperature
1 cup whole-milk ricotta cheese
