1/2 cup dry bread crumbs
3/4 teaspoon salt
1/2 cup orange juice
2 tablespoons reduced-sodium soy sauce
1 tablespoon butter, melted
1 tablespoon olive oil
1/2 teaspoon lemon juice
4 orange roughy fillets (6 ounces each)

Steps:

  • In a shallow bowl, combine bread crumbs and salt. In another shallow bowl, combine the orange juice, soy sauce, butter, oil and lemon juice. Dip the fillets into orange juice mixture, then coat with crumb mixture. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. 2 lbs orange roughy
2 tablespoons butter
1 large onion, sliced
1/2 cup orange juice
1 tablespoon lemon juice
1 teaspoon garlic salt
1 1/2 teaspoons lemon pepper seasoning
1 tablespoon parsley flakes

Steps:

  • Preheat oven to 450 degrees.
  • Place fish in a 13 x 9 inch baking dish.
  • In a separate pan, cook onion in butter until tender.
  • Spread onion mixture on fish.
  • Pour orange and lemon juice over all.
  • Season with garlic salt, lemon pepper, and parsley.

1 pound orange roughy fillets
½ cup milk
¼ teaspoon salt
⅓ cup all-purpose flour
1 ½ tablespoons olive oil
1 tablespoon minced garlic
3 tablespoons fresh lime juice
2 tablespoons lemon juice
1 tablespoon orange juice
1 tablespoon chopped fresh parsley
2 tablespoons thinly sliced green onion
1 tablespoon butter

Steps:

  • Soak fish in milk 10 minutes. Remove, sprinkle with salt and dredge in flour.
