This came from the Pittsburgh Post-Gazette. It is a dish served at a favorite local restaurant chain Eat n' Park. I added the parsley for color.

Tips:
- Choose fresh and firm orange roughy fillets. Look for fillets that are bright in color and have a mild, sweet smell. Avoid fillets that are dull or have a slimy texture.
- Use a light hand with the seasoning. Orange roughy is a delicate fish, so it's important not to overpower the flavor with too much seasoning. A simple combination of salt, pepper, and lemon juice is all you need.
- Cook the orange roughy gently. Overcooking will dry out the fish and make it tough. Cook the fillets over medium heat until they are just cooked through, about 3-4 minutes per side.
- Serve the orange roughy immediately. Once the fish is cooked, serve it immediately with your favorite sides. Some good options include roasted vegetables, mashed potatoes, or rice.
Conclusion:
Orange roughy is a delicious and versatile fish that can be cooked in a variety of ways. Whether you're grilling, baking, or pan-frying, there's a recipe in this article that's sure to please your taste buds.
