Time 55m

Yield 6 serving(s)

Number Of Ingredients 10

6 turkey breast cutlets (about 4 ounces each)
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
1/4 cup honey
2 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon black pepper
1/2 teaspoon cayenne pepper

Steps:

  • To prepare marinade, in a medium shallow dish, combine lemon juice, lime juice, honey, garlic, oregano, thyme, rosemary, black pepper, and cayenne pepper.
  • Mix well.
  • Reserve 1/4 cup of marinade.
  • Add turkey to marinade in dish and turn to coat.
  • Cover dish with plastic wrap and refrigerate for 30 minutes.
  • Heat a charcoal grill until coals form white ash, or preheat a gas grill to medium.
  • Place turkey on a grill rack.
  • Discard marinade in dish.
  • Grill turkey 4 inches from the heat, turning once and brushing with reserved marinade, until cooked through and no longer pink, about 10 minutes.
  • Place turkey on a platter.
  • Serve immediately.

Tips:

  • Choose the right cut of turkey: For this recipe, boneless, skinless turkey cutlets are best. They cook quickly and evenly, and they're not as likely to dry out as other cuts of turkey.
  • Brine the turkey cutlets: Brining the turkey cutlets in a mixture of water, salt, sugar, and spices helps to tenderize them and add flavor. You can brine the turkey cutlets for as little as 30 minutes or up to overnight.
  • Use a flavorful marinade: The marinade in this recipe is made with olive oil, lemon juice, garlic, oregano, and thyme. This combination of flavors is perfect for grilled turkey cutlets. You can also use other marinades, such as a honey-mustard marinade or a balsamic vinegar marinade.
  • Grill the turkey cutlets over medium-high heat: This will help to create a nice sear on the outside of the turkey cutlets while cooking them through on the inside.
  • Don't overcook the turkey cutlets: Turkey cutlets are thin, so they can easily overcook. Cook them just until they are cooked through, or they will become dry and tough.

Conclusion:

Citrus-grilled turkey cutlets are a delicious and healthy meal that can be enjoyed for lunch or dinner. They're easy to make and can be tailored to your own taste preferences. Whether you like your turkey cutlets mild or spicy, there's a marinade that will suit you. So next time you're looking for a quick and easy meal, give citrus-grilled turkey cutlets a try. You won't be disappointed!
