2 tablespoons orange zest
1 teaspoon lemon zest
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for oiling the grill
4 (4 to 5-ounce) center cut salmon fillets, skinned, each about 3-inches square
2 tablespoons amber agave nectar
Kosher salt and freshly ground black pepper

Steps:

  • For the salsa: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a medium bowl. Add the olive oil, lemon juice, parsley, scallions, mint, capers, orange zest, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.
  • For the salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the grilling rack with vegetable oil to keep the salmon from sticking. 1 stick unsalted butter, at room temperature
2 teaspoons lemon zest
2 teaspoons lime zest
Four 6-ounce fillets center-cut salmon, skin removed
Kosher salt and freshly ground black pepper

Steps:

  • Add the softened butter to a mixing bowl and stir until smooth. Add the lemon and lime zest and sprinkle with salt and pepper. Blend all the ingredients until smooth and completely mixed.
  • Place a sheet of plastic wrap out on your workspace. Spread the butter across the plastic wrap and roll into a log, twisting the ends to seal. Place in the refrigerator for 30 minutes to chill. Four 6-ounce skin-on salmon filets
Extra-virgin olive oil
Kosher salt and freshly ground black pepper

2 small heads escarole, halved lengthwise
Freshly squeezed lemon juice
1 small bulb fennel, cored and thinly sliced on a mandolin, plus 1 tablespoon fronds
1/2 small red onion, thinly sliced on a mandolin
1 navel orange, peeled, pith removed and cut into segments

Steps:

  • Preheat a gas grill to medium-high or prepare a medium-hot fire in a charcoal grill.
  • Brush both sides of the salmon with olive oil and sprinkle with salt and pepper. Grill the salmon, skin-side down, for 3 to 4 minutes with the gill lid closed. Open the grill, flip the salmon and cook and additional 3 to 4 minutes for medium doneness.
  • Meanwhile, brush the escarole with olive oil and season with salt and pepper. ¼ cup olive oil
salt, to taste

1 lemon, juiced
2 lemons, sliced
2 cloves garlic, minced
3 sprigs fresh rosemary
1 sprig fresh thyme
1 lb asparagus
fresh parsley, to garnish

Steps:

  • In a resealable bag or dish, add salmon, olive oil, salt, pepper, juice of one lemon, minced garlic, one thyme sprig, and one rosemary sprig.
  • Seal, mix marinade around, being careful not to bruise the fish, and allow to marinate in the refrigerator for at least one hour.
  • Preheat only half of the grill to medium-high heat for indirect grilling.
  • Slice the two remaining lemons horizontally, so that you get six slices of lemon from each one, excluding the top and bottom.

six 6-ounce center-cut pieces salmon fillets with skin
1/2 cup fresh coriander sprigs, washed well, spun dry and chopped

Steps:

  • In a blender blend citrus juices and marmalade until combined well. Pour 1/2 cup juice mixture into a bowl and stir in sugar until sugar is dissolved. Reserve juice mixture in bowl.
  • Add onion and gingerroot to juice mixture in blender and purée until smooth. Transfer mixture to a shallow baking dish just large enough to hold salmon in one layer and stir in coriander. Arrange salmon, skin side up, in baking dish. Marinate salmon, covered and chilled, 1 hour.
  • Prepare grill.
  • Remove salmon from marinade and discard marinade. Pat salmon dry. Season salmon with salt and pepper and grill, skin side down, on an oiled rack set 5 to 6 inches over glowing coals 4 minutes. Put lid on grill and grill salmon until just cooked through, 3 to 4 minutes more. (Alternatively, salmon may be grilled in a hot well-seasoned ridged grill pan with a lid over moderate heat.) Carefully transfer salmon with a metal spatula to a platter and remove skin.
  • Pour reserved juice mixture over salmon and serve with grilled mango.

3 tablespoons red wine vinegar
1 cup dark amber maple syrup
1 tablespoon tomato paste
1 tablespoons Worcestershire sauce
1 teaspoon curry powder
1/8 teaspoon liquid smoke flavoring
1 teaspoon coarse black pepper
Vegetable cooking spray
4 salmon fillets or salmon steaks, 6 to 8 ounces each
Coarse salt
1 small navel orange, zested and juiced
1 small lemon, zested and juiced
1 clove garlic, finely chopped
2 teaspoons Dijon mustard
2 tablespoons chopped fresh tarragon leaves
1 teaspoon salt
1/2 cup extra-virgin olive oil, eyeball it
2 large hearts romaine lettuce
3 scallions, chopped

Steps:

  • Prepare grill or preheat grill pan.
  • On your stove top or on your outdoor grill, place a small sauce pot over moderate heat and cook onion in oil for 3 minutes. Add vinegar and reduce by half. Add syrup, tomato paste, Worcestershire, curry, smoke flavoring and pepper. Bring to a bubble and simmer.
  • Spray salmon with cooking spray and season with salt. Grill for 3 minutes, turn and baste liberally with glaze. Turn again, glaze opposite side. If you care for salmon pink at center, remove after 6 minutes. For opaque salmon, grill 5 minutes on each side.
  • Whisk citrus with garlic, mustard, tarragon and salt. Stream in oil to combine.

Remove and cut each heart in half lengthwise, using tongs to help hold on to the charred lettuce. Cut away core at stem. Cut each half heart in half again lengthwise. Place 2 quarters of charred romaine on each dinner plate. Drizzle with dressing, working back and fourth, strapping the lettuce with dressing. Set salmon on top of the salad. Garnish with chopped scallions and serve.

For the salsa:
1 navel orange, 1 lemon and 1 lime each peeled and cut into segments
2 Roma tomatoes, diced
1/2 Red Bell pepper
2 cloves of garlic, minced
1/4 red onion, diced
1 jalapeno pepper, minced
1/4 cup cilantro, chopped
Kosher salt and fresh ground pepper
Salmon:
6 salmon steaks
4 tablespoons olive oil
Kosher salt and pepper to taste
1 tablespoon of butter

Steps:

  • Combine ingredients for salsa in a bowl and refrigerate for 2 hours Season salmon steaks and prepare with olive oil in hot ribbed grill pan for 3 minutes on each side, finish in 300 degree oven for 3 minutes - combine remaining bits in grill pan with 1 tablespoon of butter and pour over salmon just before serving Serve with citrus salsa - serves 4

2 tablespoons mrs. dash lemon pepper blend seasoning
16 ounces salmon fillets
4 slices lemons
4 slices oranges
2 tablespoons white wine
cooking spray

Steps:

  • Preheat oven to 375 degrees.
  • Spray a 9" x 9" x 2" pan with cooking spray.
  • Lay fish in pan. Coat each fillet with Mrs. Dash Lemon Peper Blend.
  • Alternate slices of lemon and orage on top of fish. Sprinkle with wine.
  • Place in oven for 5 minutes. Lower heat to 325 degrees and continue to cook for 5 minutes or until fish flakes. Rest 3-4 minutes before serving.
