MANDARIN ORANGE SALAD

Mandarin Orange Salad image

Creamy, citrus-y and studded with tender, sweet pearls of tapioca, Mandarin Orange Salad is a light, refreshing and luscious family tradition on our holiday tables, as well as at summer gatherings. It's a fantastic make-ahead orange jello salad with mandarin oranges. One of my most simple and delicious recipes for a gathering.

Number Of Ingredients 6

1 (3 oz) box orange jello mix
1 (3 oz) box vanilla pudding (cook & serve, NOT instant pudding)
1 (3 oz) box tapioca pudding powder (IMPORTANT: Plain pearl tapioca will NOT work. It must be cook & serve powdered tapioca mix and the only brand I have ever seen is Jell-O.)
2 cups water
1 (11 oz) can mandarin oranges, drained
1 cup non-dairy whipped topping (I have never tried homemade whipped cream in this salad, but my suspicion is that it would not hold up in this recipe, changing the texture dramatically.)

Steps:

  • the orange jello mix, vanilla pudding package contents and tapioca pudding package contents with the water in a medium sauce pan.
  • the mixture over medium heat, stirring frequently to prevent sticking and scorching.
  • until the mixture boils and thickens.
  • the thickened gelatin mixture into a container to cool and leave on the counter to come to room temperature before refrigerating.
  • When cooled to room temperature, cover the gelatin mixture and refrigerate until completely set.
  • After the gelatin is firmly set (minimum of 4 to 6 hours), stir in the non-dairy whipped topping and mandarin oranges. Stir until thoroughly integrated into the mandarin orange salad. The jello salad will be thick, but light and fluffy.
  • Mandarin Orange Jello Salad until ready to serve.

Time 5m

Yield 4 to 6 servings

Number Of Ingredients 7

1 large orange, peeled and ends trimmed
1 grapefruit, peeled and ends trimmed
1 large or 2 small fennel bulbs, thinly sliced
1/4 cup extra-virgin olive oil
1/4 cup packed fresh basil leaves
Kosher salt and freshly ground black pepper
1/3 cup chopped walnuts, toasted

Steps:

  • Place a sieve over a medium bowl. Hold an orange over the bowl, and using a paring knife, cut along the membrane on both sides of each segment. Free the segments and let them fall into the sieve. Repeat with the grapefruit. Squeeze the membranes over the bowl to extract as much juice as possible, reserving the juices in the bottom of the bowl. Place the fruit segments and fennel in a salad bowl.
  • In a blender or the bowl of a small food processor, blend together the oil, basil and 3 tablespoons of the reserved juice until smooth. Season with salt and pepper, to taste. Pour over the fruit and fennel. Add the chopped walnuts and toss until all the ingredients are coated.

Tips

  • For the best flavor, use fresh citrus fruits. If you don't have fresh citrus fruits on hand, you can use bottled or canned citrus juice. Just be sure to reduce the amount of sugar in the recipe, as bottled and canned citrus juices are typically sweetened.
  • If you want a smoother gelatin salad, strain the gelatin mixture through a fine-mesh sieve before pouring it into the mold.
  • To make sure the gelatin salad is set properly, chill it for at least 4 hours, or overnight.
  • If you're using a bundt pan to mold the gelatin salad, be sure to grease the pan lightly with cooking spray before pouring in the gelatin mixture. This will help the salad to release from the pan easily.
  • Once the gelatin salad is set, you can unmold it by dipping the pan briefly in warm water. Then, place a serving plate over the pan and invert it. The gelatin salad should slide out onto the plate.
  • Citrus gelatin salad can be served with a variety of toppings, such as whipped cream, fruit cocktail, or chopped nuts.

Conclusion

Citrus gelatin salad is a refreshing and delicious dessert that is perfect for any occasion. It is easy to make and can be customized to your liking. With its bright citrus flavor and creamy texture, citrus gelatin salad is sure to be a hit with everyone who tries it.
