Yield 3 3/4 cups

Number Of Ingredients 9

1 bag (12 oz., 3 cups) fresh or frozen cranberries
1 tangerine (about 6 oz.)
1/2 cup dried apricots, coarsely chopped
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1/4 cup light molasses
3/4 cup raspberry vinegar
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla

Steps:

  • Sort and remove debris from cranberries; rinse and drain. Place cranberries in a 2- to 3-quart pan. Cut unpeeled tangerine into 1-inch chunks; remove and discard seeds. Using a food processor or a knife, finely chop tangerine. Add the chopped tangerine, apricots, brown sugar, granulated sugar, molasses, raspberry vinegar, pumpkin pie spice, and vanilla to pan. Stir to mix. Cook, uncovered, over medium heat, stirring occasionally, until berries are soft and begin to pop, 12 to 15 minutes. Let cool. (If making ahead, cover and chill up to 1 month.)

Tips:

  • Use fresh cranberries. Fresh cranberries are more flavorful and have a better texture than frozen cranberries.
  • Don't overcook the cranberries. Overcooking the cranberries will make them mushy. Cook them just until they start to burst.
  • Use a variety of citrus fruits. Different citrus fruits will give the relish a different flavor. Try using a combination of oranges, lemons, and limes.
  • Add some sweetness. The relish can be sweetened with sugar, honey, or maple syrup. Start with a small amount and add more to taste.
  • Add some spices. Spices like cinnamon, nutmeg, and ginger will give the relish a warm and festive flavor.
  • Let the relish chill. The relish will taste best if it is allowed to chill for at least an hour before serving.

Conclusion:

Citrus cranberry relish is a delicious and versatile condiment that can be used to add a pop of flavor to a variety of dishes. It is perfect for Thanksgiving dinner, Christmas dinner, or any other special occasion. It can also be used as a topping for yogurt, oatmeal, or pancakes. With its bright and festive flavor, citrus cranberry relish is sure to be a hit with everyone who tries it.
