Time 55m

Number Of Ingredients 6

2 cups raw peanuts
1 cup white sugar
⅓ cup water
1 pinch coarse sea salt, or to taste
1 pinch ground cinnamon
1 pinch chili powder

Steps:

  • Cook and stir peanuts, sugar, and water together in a wide, heavy skillet over medium heat until liquid evaporates and nuts begin to crust with the hardening sugar; about 5 minutes.
  • Reduce heat to low and continue to cook and stir, scraping the bottom of the pan to coat peanuts with syrup as the sugar begins to melt and darken to a deep caramel color, about 10 minutes. • Sprinkle peanuts with sea salt and cinnamon or chili powder; tilt peanuts onto prepared baking sheet to cool completely. Break up clumps. Store in an airtight container at room temperature for up to 1 week.

Tips:

  • Use a variety of nuts: To create a colorful and flavorful mix, use a variety of nuts such as almonds, walnuts, pecans, pistachios, and hazelnuts.
  • Toast the nuts before candying: Toasting the nuts before candying enhances their flavor and gives them a slightly crunchy texture.
  • Use fresh citrus zest: Fresh citrus zest provides a bright and aromatic flavor to the candied nuts. If you don't have fresh zest, you can use dried zest, but it will not have as strong a flavor.
  • Use a heavy saucepan: A heavy saucepan will help to distribute the heat evenly and prevent the sugar from burning.
  • Stir the nuts constantly: While the nuts are cooking, stir them constantly to prevent them from sticking together or burning.
  • Let the nuts cool completely: Once the candied nuts are cooked, let them cool completely before storing them. This will help to prevent them from sticking together.

Conclusion:

Citrus candied nuts are a delicious and versatile snack that can be enjoyed on their own or used as an ingredient in other dishes. They are a great way to add a touch of sweetness and crunch to salads, yogurt parfaits, and trail mixes. They can also be used as a topping for cakes, cookies, and ice cream. With a little time and effort, you can easily make your own citrus candied nuts at home. So next time you're looking for a healthy and delicious snack, give this recipe a try.
