½ cup butter
2 cups packed brown sugar
2 eggs, beaten
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
1 teaspoon ground cinnamon
1 cup chopped pecans
12 ounces semisweet chocolate chips

Steps:

  • Cook the butter and brown sugar over low heat, in a sauce pan, until it comes to a boil. Remove from heat and let cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x18 inch jelly roll pan.
  • In a medium bowl, stir together the butter mixture, and the eggs and vanilla. Sift together the flour, baking powder, salt, and cinnamon; stir into the egg mixture until well blended. Then stir in pecans. Spread the batter onto the prepared jelly roll pan. Bake in the preheated oven for 25 minutes. Immediately sprinkle chocolate chips over the whole sheet. Let stand for 5 minutes, then spread chocolate evenly over the entire surface. Cut into squares.

3 c holiday cookie mix
1 c quick oats
1 tsp cinnamon
2 eggs at room tempeature
2 tsp vanilla extract
1/2 c mini cinnamon chips
1/2 c toffee chips
1/2 c chopped, toasted walnuts or pecans
1 Tbsp butter, melted
1 c sifted powdered sugar
1/4 tsp cinnamon
2 Tbsp or more milk

Steps:

  • 1. in a large bowl, combine cookie mix, quick oats and cinnamon. mix well.
  • 2. combine cottage cheese, eggs and vanilla. add to dry ingredients and mix until well combined.
  • 3. stir in cinnamon chips, toffee chips and walnuts or pecans. pour batter into a well greased 9x13 inch baking dish.
  • 4. bake at 375 for 20-30 minutes. place on a rack and let cool.
  • 5. combine melted sugar and cinnamon. add milk until a glaze consistency.
  • 6. brush over the top of the bars. let cool and cut into bars. store in a zip top bag.
