2 large sweet potatoes, unpeeled and scrubbed (about 1-1/2 lb)
1 1/2 tablespoons vegetable oil, melted butter or 1 1/2 tablespoons margarine
4 teaspoons maple syrup
3/4 teaspoon cinnamon
1/4 teaspoon ground ginger
1 pinch nutmeg

Steps:

  • Preheat oven to 425°F
  • Spray rimmed baking sheet with cooking spray.
  • Cut sweet potatoes lengthwise in half and each half into 4 wedges. Place on prepared baking sheet.
  • In a small bowl, combine remaining ingredients; brush half of mixture over sweet potatoes.
  • Bake in centre of oven for 20 minutes.
  • Turn and brush with remaining maple syrup mixture.
  • Bake another 15 minutes or until tender.

1 large sweet potato, peeled and cut into thick sticks
1 ¼ cups white sugar
3 teaspoons ground cinnamon
2 teaspoons ground nutmeg
2 teaspoons vanilla extract
2 cups vegetable oil for deep frying
4 teaspoons butter

Steps:

  • Place 3/4 cup sugar, 2 teaspoons cinnamon, 1 teaspoon nutmeg, and 1 teaspoon vanilla extract into a gallon size resealable plastic bag. Seal the bag and shake to blend the sugar mixture. Add the sweet potato sticks, seal the bag, and turn to evenly coat the potatoes with the sugar mixture.
  • Pour the canola oil into a deep fryer and heat to 375 degrees F (190 degrees C). Add the sweet potatoes, and cook until golden, about 10 minutes. Drain on paper towels, then place on a serving plate.
  • Place the remaining 1/2 cup sugar, 1 teaspoon cinnamon, 1 teaspoon nutmeg, and butter into a pan. Warm over medium heat until butter is melted; drizzle over the sweet potatoes.

2 sweet potatoes (large)
1/3 cup extra virgin olive oil
3 teaspoons cinnamon (ground)
salt (seasoned salt)

Steps:

  • Preheat oven to 350 degrees F.
  • Peel sweet potatoes and then slice into French fry style sticks.
  • Line a jelly roll pan with a sheet of baker's parchment paper.
  • Toss sweet potato fries in a bowl with olive oil to coat sweet potatoes.
  • Lie sweet potato fries on to the parchment paper.
  • Sprinkle with salt.
  • Use 1.5 teaspoons worth of cinnamon and sprinkle sweet potato fries.
