Time 40m

Yield 2 cups

Number Of Ingredients 7

2 cups walnut pieces
Canola oil, for coating the foil
2 tablespoons light corn syrup
2 tablespoons maple syrup
2 tablespoons light brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 325 degrees F. Line a baking sheet with aluminum foil.
  • Spread the walnuts out on the prepared baking sheet and roast for 5 minutes. Let cool, then transfer to a bowl. Lightly coat the aluminum foil with canola oil.
  • In a second bowl, combine the corn syrup, maple syrup, brown sugar, cinnamon and salt. Stir to combine, breaking up any lumps of cinnamon. Add the walnuts and toss to coat thoroughly. Pour the walnuts onto the oiled baking sheet.
  • Bake, stirring occasionally, until the walnuts are golden brown, 12 to 15 minutes. Remove from the oven and let cool. Sprinkle over desserts, or serve with cheese or as a snack.

CINNAMON SUGARED WALNUTS

I first got these as a "teacher gift" for Christmas almost 30 years ago. Then I just had to track down the mom and beg for the recipe! These make an EXCELLENT food gift for all the people you appreciate and/or love. I usually double the recipe (after buying a large bag of walnuts on sale or at a warehouse store.) I've packaged...

Time 45m

Number Of Ingredients 4

1/2 c white sugar
2 Tbsp ground cinnamon
4 c walnut halves
1 egg white

Steps:

  • 1. Preheat oven to 300 degrees F. (PLEASE note the temperature is THREE HUNDRED degrees! These nuts will burn at a higher temperature. Don't ask how I know this...)
  • 2. Spray a cookie sheet (with sides, unless you're really coordinated) with cooking spray.
  • 3. Stir together the sugar and cinnamon in a small bowl and set aside.
  • 4. Put the nuts in a large bowl and pour in the egg white. Mix together well. (OK, I admit I mix this recipe up with my hands.)
  • 5. Pour the sugar & cinnamon mixture over the nuts and mix well.
  • 6. Spread in a single layer on the prepared cookie sheet.
  • 7. Bake for about 30 minutes (I check after 25 minutes) until the nuts are toasted and dry. Serve warm or cool completely.
  • 8. Store in an air-tight container.

Tips:

  • Choose the right walnuts: Use whole, raw walnut halves that are fresh and free of any cracks or blemishes. Fresh walnuts will have a sweet, nutty flavor, while older walnuts may be bitter.
  • Toast the walnuts: Toasting the walnuts before coating them in cinnamon sugar will enhance their flavor and make them more crispy. You can toast the walnuts in a preheated oven at 350°F for 8-10 minutes, stirring once or twice, or in a single layer in a large skillet over medium heat for 3-4 minutes, stirring constantly.
  • Use a good quality cinnamon: The type of cinnamon you use will make a big difference in the flavor of your walnuts. Look for Ceylon cinnamon, which has a sweet, delicate flavor, or Saigon cinnamon, which has a more intense, spicy flavor.
  • Don't overcrowd the walnuts: When you're coating the walnuts in cinnamon sugar, don't overcrowd them in the bowl. If there are too many walnuts in the bowl, they won't get evenly coated. Work in batches if necessary.
  • Let the walnuts cool completely: After you've coated the walnuts in cinnamon sugar, let them cool completely before storing them. This will help the sugar to set and prevent the walnuts from sticking together.

Conclusion:

Cinnamon sugared walnuts are an easy and delicious snack that can be enjoyed on their own or added to a variety of dishes. They're a great way to add a touch of sweetness and crunch to salads, yogurt, oatmeal, and trail mix. They can also be used as a topping for cakes, cookies, and ice cream. With just a few simple ingredients and a little bit of time, you can make your own delicious cinnamon sugared walnuts at home.
