4 large egg whites
1 teaspoon vanilla extract
2-1/4 cups cake flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup 2% milk
TOPPING:
2 tablespoons sugar
1/2 teaspoon ground cinnamon
CINNAMON FROSTING:
1/4 cup butter, softened
1 teaspoon clear vanilla extract
1/4 teaspoon ground cinnamon
2-1/4 cups confectioners' sugar
3 tablespoons 2% milk
Additional ground cinnamon

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg whites and vanilla. 1 tablespoon baking powder
3/4 teaspoon salt
1/2 cup graham cracker crumbs
1/2 cup brown sugar, packed
1/4 cup unsalted butter, melted
1 cup unsalted butter, room temperature (2 sticks)
1 1/2 cups sugar
5 large eggs, separated into 5 yolks and reserving only 3 egg whites, room temperature
2 teaspoons madagascar bourbon vanilla extract
2 1/2 tablespoons ground cinnamon
1 1/3 cups whole milk, room temperature
1/2 cup graham cracker crumbs
1/2 cup brown sugar, packed
1/4 cup unsalted butter, melted
1 (8 ounce) package cream cheese, room temperature
1/2 cup unsalted butter, room temperature
1 teaspoon madagascar bourbon vanilla extract
1 tablespoon ground cinnamon
1/2 teaspoon salt
2 cups confectioners' sugar, sifted

  • Preheat the oven to 350ºF. Line mini cupcake pans with 72 mini cupcake liner or line a regular-size cupcake or muffin pan with 24 cupcake liners.
