Tips:
- Use unsalted butter. This will help you control the amount of salt in the cookies.
- Cream the butter and sugar together until light and fluffy. This will help create a smooth and even dough.
- Gradually add the eggs, one at a time, beating well after each addition. This will help prevent the eggs from curdling.
- Stir in the dry ingredients until just combined. Overmixing will make the cookies tough.
- Chill the dough for at least 30 minutes before baking. This will help the cookies hold their shape.
- Roll the dough into 1-inch balls and place them on a parchment paper-lined baking sheet. Make sure to space the cookies at least 2 inches apart.
- Bake the cookies for 10-12 minutes, or until they are just set. Do not overbake, or the cookies will be dry.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once the cookies are completely cool, roll them in confectioners' sugar.
