Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.

1 c sugar
4 tsp baking powder
1 1/2 c milk
2 eggs
2 tsp vanilla
4 Tbsp butter, melted
2 stick (1 cup) butter, softened

1 Tbsp cinnamon
2/3 c nuts (optional) *i used finely chopped pecans
2 c powdered sugar
5 Tbsp milk
1 tsp vanilla

  • 1. With an electric mixer or stand-up mixer, mix 3 cups of flour, sugar, salt, baking powder, milk, eggs, and vanilla. Once combined well, slowly stir in 4 T melted butter. Pour batter into a greased 9x13 baking pan.

The flavor of a cinnamon roll and the ease of a coffee cake! A friend emailed me this recipe, which she got from a message board. This is quick to put together, super moist and simply delicious. It is different than many coffee cakes out there and I hope you enjoy it as much as we do! The original baking time I was given was 50-60 minutes. Mine was done in 40 minutes, so I changed the baking time on it. If yours takes longer than what I have stated, I guess it was just my oven. :)

3/4 cup brown sugar
1/4 cup heavy cream
1 pinch salt
1 cup chopped pecans, toasted
1/2 cup brown sugar
1/3 cup all-purpose flour
4 tablespoons unsalted butter, sliced
1 1/2 tablespoons ground cinnamon
1/4 teaspoon table salt
1/2 cup unsalted butter, softened
3/4 cup sugar
1/2 cup buttermilk
1/4 cup low-fat vanilla yogurt
2 eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt

Steps:

  • Preheat oven to 350°; coat a 9" pan with nonstick spray.
  • Stir together brown sugar, cream, and pinch of salt for the caramel. Pour into prepared pan and spread to coat the bottom. Sprinkle pecans over the caramel.
  • Process brown sugar, flour, butter, cinnamon, and 1/4 teaspoons salt for the streusel in a food processor. Pulse until small clumps form; set aside. If you don't have a food processor, do it by hand.
  • Whisk buttermilk, yogurt, and eggs together.
  • Sift flour, baking powder, soda, and 1/2 teaspoons salt together.
  • Cream butter and sugar with a mixer just until combined.
  • Alternately add dry and wet ingredients, starting and ending with the dry. Blend each addition just until incorporated.
  • Spread half the batter over the caramel, then sprinkle with half the streusel. Carefully spread remaining batter over that and top with remaining streusel.
  • Bake 40-45 minutes, or until a toothpick comes out clean. Cool cake for 5 minutes on a rack, then run a paring knife around the sides to loosen. Invert onto a serving platter while hot, then let cool slightly before slicing.
  • The top is a little sticky, so use a sharp thin bladed knife to cut.

3 c all purpose flour
3 tsp baking powder
1/4 tsp salt
1 c granulated sugar
1 1/2 c milk
2 eggs
1 stick melted butter
CINNAMON TOPPING
2 stick butter -room temp
1 c light brown sugar
2 Tbsp flour
1 Tbsp cinnamon
CREAM CHEESE GLAZE
4 oz cream cheese-room temp
1 1/2 c powdered sugar
1 tsp vanilla
4-6 Tbsp milk-mixed until desired consistency

Steps:

  • 1. Preheat oven to 350 Spray a 9x13 pan with bakers joy
  • 2. Begin by beating all of the cake ingredients together except the melted butter. Slowly add melted butter last. when blended well pour in prepared pan
  • 3. Mix all of the topping ingredients together with a beater. it was cold when i did this so i threw my butter in the microwave for 10seconds and it worked well.
  • 4. With a tablespoon drop the topping in small mounds all over the cake. With a butter knife swirl this mixture or marble. Careful not to scrape the bottom of the pan. You want to marbled well.
  • 5. Bake in a 350 degree oven for 30 -35 min
  • 6. Remove from the oven Mix the glaze together getting the consistency you desire Pour glaze over slightly warm cake. I allowed my cake to cool for about 30min

Steps:

  • With an electric mixer or stand-up mixer, mix flour, sugar, salt, baking powder, milk, eggs, and vanilla. Once combined well, slowly stir in 4 tablespoons melted butter. Pour batter into a greased 9x13" baking pan. In a large bowl, mix the 2 sticks of softened butter, brown sugar, flour, cinnamon, and nuts until well combined. Drop evenly over cake batter by the tablespoon and use a knife to marble/swirl through the cake. Bake at 350° for 25-30 minutes or until toothpick comes out nearly clean from center. Place powdered sugar, milk, and vanilla in a large bowl. Whisk until smooth. Drizzle over warm cake. Serve warm (we like it straight out of the oven) or at room temperature.

1 (12.4 oz.) can refrigerated cinnamon rolls, icing reserved
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (1/2 stick) unsalted butter, room temperature
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
3/4 cup sour cream
1 teaspoon cinnamon
1/4 cup sugar
1/4 cup brown sugar

Steps:

  • Preheat oven to 350º F and lightly grease a pie plate or springform pan with butter or non-stick spray. Remove cinnamon rolls from packaging and place them in greased pie plate. Use your fingers or the bottom of a measuring cup to flatten rolls into an even layer, forming a crust that goes partially up the sides of pie plate. In a medium bowl, whisk together flour, baking soda, baking powder and salt. Set aside. In a large bowl or mixer, cream together butter and sugar for 3-4 minutes, or until fluffy and lightened in color. Beat in egg and vanilla extract. Beginning and ending with the dry ingredients, alternate between adding the flour mixture and sour cream, mixing until everything is just incorporated. In a separate bowl, whisk together topping ingredients (cinnamon, sugar and brown sugar). Pour cake batter on top of cinnamon roll-lined pie pan and smooth into an even layer. I found this on Pintrest from 6 sisters and made it my own by making it with self rising flour and omitting the baking powder. It makes such a big cake that by cutting it in half, it is best for us as empty nesters.

3 c flour
1/4 tsp salt
1 c sugar
1 1/2 c milk
2 eggs
2 tsp vanilla extract
4 Tbsp butter, melted
FILLING
2 stick butter, softened
1 c brown sugar, lightly packed
2 Tbsp flour
1 Tbsp cinnamon
2/3 c pecans, in pieces
GLAZE
2 c powdered sugar
5 Tbsp milk
1 tsp vanilla extract

Steps:

  • 1. Mix together flour, sugar, salt, milk, eggs, and vanilla. Once it is mixed well, slowly stir in 4 T of melted butter. Pour batter into greased 9 x 13 pan. In large bowl mix the softened butter, brown sugar, flour, cinnamon and pecans until well combined. Drop by spoonfuls over cake batter. Use a knife to swirl into cake batter. Bake 350 degrees for 30 minutes or until tooth pick comes out clean.
  • 2. Mix together powdered sugar, milk and vanilla extract in a medium bowl with a whisk. Drizzle over warm cake. Serve warm and is good at room temp.

Tips:

  • For a softer cake, use cake flour instead of all-purpose flour.
  • Make sure the butter is cold and cubed before adding it to the flour mixture. This will help create a flaky crust.
  • Don't overmix the dough. Overmixing will make the cake tough.
  • Roll the dough out to a 12x18 inch rectangle. This will ensure that the cake is evenly cooked.
  • Spread the cinnamon sugar mixture evenly over the dough. This will help create a delicious, evenly flavored cake.
  • Roll the dough up tightly, starting from the long side. This will help keep the cinnamon sugar mixture inside the cake.
