4 tablespoons butter, divided
2-1/2 cups chunky applesauce
1 cup diced peeled apples

1/4 cup sugar, divided
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup short-grain rice (arborio)

3 cups milk
2 teaspoons vanilla
