CINNAMON CANDIED APPLES
For years, we enjoyed candied apples at Christmas when my great-grandmother made them. When she passed away, no one could find the recipe. I eventually came across this stovetop version and have continued her tradition. -Angie Marquart, Mt. Gilead, Ohio

CINNAMON RED HOT APPLE PIE
Many years ago, a co-worker of mine used to go apple picking annually and would then bring some apples to me so I could make a pie for him. I got tired of making my same old apple pie and asked him if I could experiment a little bit. He agreed, and this is what I came up with. He was pleasantly surprised (and so was I).

Steps:
- Preheat oven to 450 degrees. Roll out half of pie crust pastry and place into a 9-inch pie plate, trimming edges even with pie plate.
- In small saucepan over low heat, heat lemon juice and cinnamon candies until candies melt. Remove saucepan from heat and stir in honey and cinnamon. Arrange apples in crust and pour the honey mixture over apples; dot with butter.
- Roll out remaining dough. Moisten edges of bottom crust with a little water, then lift top crust onto filled pie plate. Trim pastry edge, leaving a 1-1/2 inch overhang. Fold top edge under bottom crust; flute edge as desired. Cut slits or design in top crust to allow steam to escape while baking. Brush top crust with milk.
- Turn oven down to 350 degrees and bake for 1 hour or until crust is golden brown. Cool and serve.
Tips:
- Choose firm apples: To maintain their shape during stewing, select firm apples like Granny Smith, Honeycrisp, or Braeburn.
- Use a heavy-bottomed pot: This will distribute heat evenly and prevent scorching.
- Don't overcrowd the pot: Apples should be in a single layer to ensure even cooking.
- Simmer, don't boil: Maintain a gentle simmer to prevent the apples from breaking down too much.
- Add spices and sugar gradually: Taste the apples as you go to adjust the sweetness and spice level to your preference.
- Remove the apples when tender: Use a slotted spoon to transfer the apples to a bowl once they are tender but still hold their shape.
- Let the apples cool slightly before serving: This will allow the flavors to meld and the sauce to thicken.
Conclusion:
These recipes offer a delightful twist to the classic stewed apples dessert. By incorporating cinnamon candies like Red Hots or Atomic Fireballs, you add a sweet and spicy kick that elevates the dish. The combination of tart apples, warm spices, and the candy's unique flavor creates a symphony of flavors that is both comforting and exciting. Whether you prefer a mild heat or a more intense spicy punch, adjusting the amount of candy used allows you to customize the recipe to your liking. Serve these stewed apples warm with a scoop of vanilla ice cream, whipped cream, or even a drizzle of caramel sauce for an indulgent treat that will tantalize your taste buds.
