CINNAMON TORTE

Cinnamon Torte image

This is one of my favorite recipes. If you like cinnamon you will love this recipe. It's very elegant so it's great for a dinner party. It's a lot of work making the cookie layers, but you can do it days in advance. Assembling the Torte its self does not take long. You will a need to assembly the torte at least 4 hours ahead or overnight and refrigerate it.

CINNAMON RASPBERRY TORTE

Cinnamon Raspberry Torte image

Lovely dessert, it will not rise high like a cake and the top will look a bit rustic. The sauce and cream/yogurt are both optional, but for a dinner party I would recommend you serve it with those two. Reserve a few raspberries for serving too.

STRAWBERRY & CINNAMON TORTE

Strawberry & cinnamon torte image

Just blitz and bake to produce this fruity dessert

Provided by Orlando Murrin

Categories     Buffet, Dessert, Dinner, Lunch, Treat

Time 1h30m

Number Of Ingredients 9

175g ground almond
175g butter softened
175g golden caster sugar
175g self-raising flour
1 tsp ground cinnamon
1 large egg , plus 1 egg yolk
450g strawberry , hulled and sliced
icing sugar , for dusting
whipped double cream mixed with Greek yogurt (half and half is good), to serve

Steps:

  • Preheat the oven to 180C/gas4/ fan 160C. Line the base of a loose-bottomed 23cm cake tin with greaseproof paper and butter the sides.
  • Mix almonds, butter, sugar, flour, cinnamon, egg and egg yolk in a food processor just until the ingredients are evenly combined.
  • Spread half the mixture over the base of the tin in a smooth layer with no gaps - easiest to do this with two forks. Lay the sliced strawberries on top. Add the remaining cake mixture and spread it as best you can, but don't worry if a few strawberries peep through.
  • Bake for 1 hour (it may need an extra 5 minutes), but check after 40 minutes - if it is getting too brown, cover loosely with foil. The torte should be slightly risen and dark golden brown when cooked.
  • Cool in the tin slightly, then loosen the edges with a knife and remove from the tin. Slide the torte onto a plate and sprinkle with a dusting of icing sugar. Serve warm or cold, in wedges with dollops of cream and Greek yogurt.

RASPBERRY CHOCOLATE TORTE

Raspberry chocolate torte image

This cake takes the Austrian sachertorte to new heights. The raspberry filling adds a bright fruitiness that makes it seem far less rich than it really is. Serve in small slices

Provided by Orlando Murrin

Categories     Treat

Time 40m

Yield Cuts into 12

Number Of Ingredients 14

225g dark chocolate , 70% cocoa solids
175g unsalted butter , chopped, diced
2 tsp vanilla extract
¼ tsp instant coffee powder or extract
100g toasted almonds
2 heaped tbsp plain flour
½ tsp salt
5 eggs
140g golden caster sugar
12 fresh or defrosted frozen raspberries , plus about 40 more for decoration
4 tbsp raspberry jam
140g dark chocolate , 70% cocoa solids, chopped
100ml double cream
icing sugar and sweet vanilla cream, to serve

Steps:

  • Heat oven to 160C/140C fan/gas 3. Line the bases of two 23cm cake tins with baking parchment. Melt the chocolate and butter in the microwave; leave to cool. Stir in the vanilla and coffee powder.
  • Whizz the almonds in a food processor until finely ground, then add flour and salt, and transfer to a bowl. Whisk the eggs with an electric mixer for 5 mins, until doubled in volume. Slowly add the sugar, whisk for 1 min more. Fold in the cooled chocolate mixture until just combined. Sprinkle over half the flour mixture and fold in, then the other half. The mixture will be rather runny.
  • Divide between the two tins and bake for about 15 mins until a skewer comes out with a few crumbs attached - the sponges should be slightly undercooked. Cool in tin, then turn out onto a wire rack.
  • Choose the less perfect of the two, then set it on a serving plate. Mash 12 raspberries and stir in the jam. Spread on the base, then top with the other cake.
  • For the glaze, bring the cream to the boil, pour it over the chocolate and whisk until smooth. Leave for a few mins until starting to thicken, then spread over the top and sides to cover. Decorate with raspberries. Chill for up to 24 hrs. Remove from fridge 1 hr before serving, dust with icing sugar, and serve with vanilla cream.

Tips:

  • Prepare Ingredients Accurately: Measure ingredients precisely using proper measuring cups and spoons to ensure the correct proportions and consistency of the torte.
  • Use Fresh Berries: Opt for fresh raspberries for optimal flavor and texture. Frozen berries can be used, but they tend to release more liquid and may require adjustments to the recipe.
  • Chill Components: Before assembling the torte, chill the crust and raspberry filling to help them set properly and prevent the filling from becoming too soft.
  • Spread Filling Evenly: When pouring the filling onto the crust, make sure to distribute it evenly to create a smooth and level surface.
  • Chill Before Serving: After assembling the torte, refrigerate it for at least 4 hours or overnight to allow the flavors to meld and the filling to set completely.

Conclusion:

With its stunning appearance and delectable flavor, the Cinnamon Raspberry Torte is a perfect dessert for any occasion. The combination of sweet raspberries, aromatic cinnamon, and a buttery crust creates a harmonious symphony of flavors that will impress your taste buds. Impeccable preparation and attention to detail are key to achieving the perfect balance of textures and flavors.
