- Heat a cast iron griddle or any skillet over medium-low heat.
- If you don't already have a cinnamon & sugar mixture, then mix the two together in a small dish.
- Butter/oil both sides of the 4 pitas. Sprinkle each side with 1/4 tsp of the cinnamon mixture.
- Place all 4 pitas on pre-heated griddle/skillet. Cook until nicely browned, about 3-5 mins.
- Then flip to the other side and repeat.
- While pitas are browning/toasting, clean and slice all the fruits.
- Add to a bowl, mix until well combined.
- Let the pitas cool and then spread 1-2 tablespoons of the Greek yogurt inside the pita.
- Fill with fruit.
- Sprinkle the toasted almonds. Enjoy.
- TIP: If you need to toast your sliced almonds, put them on a small pan and put them in a pre-heated oven or toaster oven for about 4-5 minutes, until lightly browned.
PESTO PITA TOASTS
Steps:
- Cut pita rounds into 6 triangles. Split triangles in half. Brush the rough side of triangles with olive oil. Brush 1/2 tablespoon pesto on each triangle. Sprinkle with Parmesan.
- Place on baking sheet. Bake for 5 to 7 minutes in a 350 degree oven until crisp.

- Melt some butter in a large (12-inch) nonstick skillet over medium-low; you'll want enough to lightly coat the bottom of the skillet when melted. When bubbling, add as many bread slices as will fit. Swirl the bread around to absorb the butter, adding more butter if the pan is dry. Cook until light golden brown, 2 to 3 minutes, adjusting the heat as needed to avoid burning.
- Add another pat of butter, flip the bread and swirl to coat the other side in butter, gently pressing the bread to pick up any browned bits.
