A great version of serving carrots that even kids love. The cinnamon is such a nice touch and the honey is a great substitute for sugar. I hope you enjoy it too.

Time 35m

Yield 6-8 serving(s)

Number Of Ingredients 6

3 tablespoons butter
1 1/2 lbs baby carrots, trimmed,scrubbed
1/2 teaspoon salt
water
1/2 teaspoon ground cinnamon
1/2 cup brown sugar

Steps:

  • Melt butter in saucepan.
  • Add carrots, salt, sugar and just enough water to barely cover the carrots.
  • Cover and cook carrots on medium heat until tender.
  • (time depends on carrot size. I usually cook baby carrots for about 25 minutes.) Remove lid, bring saucepan to a boil and boil until water is evaporated completely, leaving carrots with a sticky, buttery glaze.
  • Watch carefully and stir so carrots do not scorch.
  • Sprinkle with cinnamon and mix.
  • Serve immediately.

Tips:

  • Select the right carrots: Choose fresh, firm carrots of uniform size for even cooking. Young carrots with their tender texture and sweet flavor are ideal for this recipe.
  • Prepare the carrots properly: Peel and trim the carrots, leaving about 1 inch of the green tops intact. This adds a pop of color and nutrients to the dish.
  • Use unsalted butter: Unsalted butter gives you more control over the flavor of the glaze. If using salted butter, reduce the amount of salt in the recipe or omit it altogether.
  • Don't overcrowd the pan: Cook the carrots in batches if necessary to avoid overcrowding the pan. This ensures even cooking and prevents the carrots from steaming instead of roasting.
  • Roast the carrots until tender: Roasting brings out the natural sweetness of the carrots and caramelizes them slightly. Roast until they are tender when pierced with a fork, but still hold their shape.
  • Make the glaze while the carrots are roasting: This allows the flavors to meld and thicken slightly. The glaze should be thick enough to coat the carrots but not too thick that it becomes difficult to pour.
  • Glaze the carrots: Toss the roasted carrots in the prepared glaze until evenly coated. You can do this in a large bowl or directly in the roasting pan.
  • Garnish with fresh herbs: Fresh herbs like parsley or thyme add a pop of color and flavor to the dish. Sprinkle them over the glazed carrots before serving.

Conclusion:

These cinnamon-glazed carrots are an easy and delicious side dish that will elevate any meal. They are perfect for special occasions or everyday dinners. The combination of sweet, savory, and slightly spicy flavors makes them a crowd-pleaser. With a few simple tips and tricks, you can create this dish that is both visually appealing and packed with flavor. So, next time you're looking for a simple yet impressive side dish, give these cinnamon-glazed carrots a try. They are sure to become a family favorite.
