COCONUT CHOCOLATE CHIP BANANA BREAD

Coconut Chocolate Chip Banana Bread image

A twist on the classic banana bread, replacing the traditional walnuts with coconut flakes and chocolate chips. I combined and tweaked several traditional recipes to come up with this one. Some suggested additions or substitutions: white, dark, or milk chocolate chips instead of the semi sweet and/or adding chopped macadamia nuts. Hope you enjoy!

Number Of Ingredients 13

1 1/4 cup whole wheat flour (or white whole wheat)
1/2 cup all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon powder
2 large eggs, room temperature
1/2 cup light brown sugar, packed
1 container (5.3 oz) greek yogurt
1/2 cup coconut oil (vegetable or canola is fine too)
4 very ripe bananas, mashed
1 teaspoon vanilla extract
1/2 cup bittersweet chocolate chips (or semi-sweet for more sweetness)
1/2 cup unsweetened shredded coconut

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350ºF. Spray a 9x5 loaf pan with cooking spray, set aside.
  • In a small bowl, whisk together the whole wheat flour, all purpose flour, baking soda, salt, and cinnamon, set aside. In a medium bowl, combine the eggs and brown sugar. Whisk until combined. Add the greek yogurt and coconut oil, continue to whisk until completely mixed. Add the bananas and the vanilla extract and fold.

CINNAMON AND CHOCOLATE BANANA BREAD

Provided by Marcela Valladolid

Time 1h15m

Yield 12 muffins

Number Of Ingredients 14

1 1/4 cups unbleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon fine salt
1/2 teaspoon pure vanilla extract
2 large eggs, at room temperature
1 cup sugar
8 tablespoons (1 stick) unsalted butter, at room temperature
3 very ripe bananas, peeled and mashed with a fork (about 1 cup)
1/2 cup toasted walnut pieces
1 disk Mexican chocolate, chopped into small pieces
3/4 cup unbleached all-purpose flour
1/2 cup packed brown sugar
1 tablespoon ground cinnamon
8 tablespoons (1 stick) unsalted butter

Steps:

  • For the banana bread: Preheat the oven to 350 degrees F. Line a 12-count muffin tin with cupcake liners.
  • Sift the flour, baking soda and salt into a medium bowl. Whisk the vanilla and eggs together in a liquid measuring cup with a spout. Set aside.
  • In a stand mixer fitted with the paddle attachment or with an electric hand-held mixer, cream the sugar and butter until light and fluffy. Gradually pour in the egg mixture while beating; beat until incorporated. Mix in the bananas (the batter will appear curdled, but don't worry), then remove the bowl from the mixer. With a rubber spatula, fold in the flour mixture until just incorporated. Fold in the walnuts, then the Mexican chocolate.
  • For the cinnamon crumble topping: In a small bowl, mix together the flour, brown sugar and cinnamon. Cut in the butter with 2 knives until uniform.
  • Fill the cups of the muffin tin about halfway with the batter. Spoon the cinnamon crumble topping over the muffins, pressing it lightly into the batter. Bake until the topping is golden and a toothpick inserted in the center of the muffins comes out clean, 20 to 25 minutes. Let cool before serving. These muffins are great with a smear of butter.

Tips:

- For a fudgier banana bread, use an extra ripe banana. The riper the banana, the more sugar it contains which will result in a denser, more moist bread. - To achieve a crispy crust, sprinkle a little raw sugar on top of the batter before baking. - To enhance the coconut flavor, toast the coconut flakes before adding them to the batter. Toasting the coconut will bring out its natural sweetness and nuttiness. - For a richer, more decadent flavor, use dark chocolate chips instead of semi-sweet chocolate chips. - If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or white vinegar to 1 cup of regular milk. Let it sit for 5 minutes before using. - Be sure not to overmix the batter. Overmixing will result in a tough, dense bread. - Bake the bread until a toothpick inserted into the center comes out with just a few moist crumbs attached. Overbaking will result in a dry bread. ###
