1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
  • In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.

2 teaspoons vanilla extract

Steps:

  • In a large bowl, cream butter and 2 cups sugar until light fluffy. Add 1 egg at a time, beating well after each addition. Beat in vanilla. This is my version of Apple cinnamon chip coffee cake. I love Apple and Cinnamon together. This coffee cake is full of Apples, cinnamon, nuts, and covered with a Brown butter icing. It is very delicious, and one of the best coffee cakes I have ever had.

3/4 c softened butter
1/2 c granulated sugar
1/2 c light brown sugar
2 egg
1 tsp vanilla extract
1 c unsweetened apple sauce
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2 1/2 c flour
1 1/2 c chopped apples
1 c chopped walnuts
1 2/3 c cinnamon chips like hershey ( if you can't find them in the store. there is a recipe for them that i linked below recipe.
BROWN BUTTER ICING
3 Tbsp butter
1 c powdered sugar
1/2 tsp cinnamon
1/2 tsp vanilla
2 Tbsp milk
3/4 c chopped walnuts

Steps:

  • 1. pre heat oven to 350 degree's. Grease and flour a Bundt or angel food cake pan.
  • 2. Beat butter, and sugars together. Add eggs, and vanilla. Beat on low speed until well blended. Mix in the apple sauce.
  • 3. Combine the flour, baking soda, salt, and cinnamon together. Gradually add to butter mixture a little at a time. Mix on medium speed.
  • 4. Stir in the nuts, cinnamon chips, and apples. Pour in to Bundt pan. Make sure thick batter is level. Bake at 350 degree's for 40-45 minutes, or until pick comes out clean. Cool and invert on to platter. Make icing.
  • 5. Make icing: Melt the butter in a saucepan on low-medium high heat. Stir constantly until butter turn golden brown. Do not burn. Let cool slightly. Add in sifted powdered sugar, vanilla, cinnamon, and milk one tablespoon at a time. Blend well. Drizzle over coffee cake, and top with finely chopped walnuts,and serve.

Steps:

  • To Assemble.
  • Preheat oven to 350 °F and grease and flour a 9-x-5-inch loaf pan.
